Herby lamb meatballs with spaghetti

Who says meatballs have to be beef?! Our herby lamb meatballs are super easy to make and totally delicious! So liven up your midweek dinner with this lambtastic meatball twist!

My kids just love it when I make pasta and meatballs, but just to shake things up a little I’ve created these mouthwateringly tasty lamb meatballs using lamb mince instead of regular beef mince.

Our tasty herby lamb meatballs are packed with fresh thyme and lots of garlic. Simply served with some wholewheat spaghetti and a freshly made quick tomato sauce. Our Tomato and Cucumber Salad is a great side dish to serve with this.

Everything is easy to prepare and cook so it’s great for weeknight cooking

. I usually make the meatballs in the morning and leave them in the fridge until dinner that night.

Lamb Meatball Ingredients

For the lamb meatballs

  • 500g lamb mince
  • 1 onion – finely chopped
  • 3 cloves garlic – finely chopped – I usually grate it using the fine grating side of a box grater
  • 100g breadcrumbs
  • 1 handful of fresh thyme leaves – removed from stems

For the tomato sauce

  • 1 tbs olive oil
  • 1 onion – finely chopped
  • 1 cloves garlic – finely chopped, you could use 1/2 tsp garlic powder if you prefer.
  • 2 tins of chopped tomatoes – I usually use Mutti tomatoes, they’re just the BEST!
  • 350g spaghetti (uncooked weight) – to serve

How To Make Lamb Meatballs

  • First get the tomato sauce simmering away – add a splash of olive oil to a saucepan and gently fry the onions and garlic until softened, tip in the chopped tomatoes and season with salt and pepper, leave to simmer gently for around 30-40 minutes.
  • To make the meatballs – firstly fry the onion and garlic over a low heat until softened – then add them to the lamb mince, add the thyme and breadcrumbs and season with salt and pepper.
  • Roll the meatball mixture – into small ping pong sized balls and place into a roasting tin.

  • Cook the meatballs – in the oven on 190C / 375 F for around 20 minutes until cooked through properly.
  • Whilst the meatballs cook – cook the spaghetti in salted boiling water as per the packet instructions – stirring regularly with a fork so it doesn’t stick.
  • To serve – tip the spaghetti into the roasting tin with the meatballs, pile on the tomato sauce, mingle everything together and tuck in!

Make Lamb Meatballs Your Way!

Okay, so I’ve given you a really easy base recipe for meatballs but you can switch up any part of the recipe to suit your own tastes – it’s your dinner, make it your favourite way!

  • Switch the lamb mince for beef mince – I’d also add fresh oregano instead of thyme
  • Switch the lamb mince for pork mince.
  • Add some heat with a pinch of chilli flakes in the meatballs and tomato sauce.

Ingredients

For the meatballs

  • 500g lamb mince
  • 1 onion - finely diced 
  • 3 cloves garlic - finely chopped 
  • 100g breadcrumbs 
  • Small handful of fresh thyme leaves

For the tomato sauce

  • 1 tbs olive oil 
  • 1 onion - finely chopped

  • 2 x 400g tins of chopped tomatoes 
  • 350g spaghetti to serve
