A deliciously summery easy pea salad recipe that’s bursting with flavourful ingredients and dressed in a tangy wholegrain mustard dressing.

I just adore a lovely pea salad with tangy feta cheese. -The combination of sweet peas with the a salty cheese is just so perfect.

I like to make this for myself when there’s just me home for lunch, as it’s just so quick and vibrant.

It’s also a really adaptable recipe and I swap and change the ingredients depending on what I have in the fridge.

Pea Salad Ingredients

  • 50g salad leaves – cos, baby leaf salad or spinach work well or even a combination, just choose your favourite.
  • 1 cup peas – cooked and cooled
  • 30g feta cheese – you could switch this for Wensleydale, Crumbly Lancashire cubes or even Parmesan shavings, just choose your favourite.
  • 2 artichoke hearts – sliced, I use these straight from a jar of antipasti
  • 1 tsp capers
  • 3 tsp olive oil
  • 2 tsp lemon juice
  • pinch of sea salt

How to make pea salad

  • Firstly you need to take your salad leaves, it could be a handful of shredded cos, or lovely flat leaf lettuce or even just a couple of handfuls of baby leaf salad grabbed from a bag of ready to eat salad.
  • Then you need to scatter the leaves over the plate to form the base of the salad.
  • Next scatter over the cooked, chilled peas.

If you’re cooking peas just to use in this salad, cook them in the microwave as per the packet instructions. Then pop them in a sieve and rinse them under cold running water to cool them fast.

  • Next you need you chosen cheese – I like a salty cheese. I’m happy to make this with a nice regional cheese like Crumbly Lancashire or Wensleydale or a few cubes of feta from a jar or even Parmesan shavings.
  • Then you need the little extras, I usually use capers and artichoke hearts as they’re my favourite. But you could just use a mixed jar of roasted antipasti vegetables or even just a handful of olives.
  • Next, whip up a simple dressing of lemon juice, olive oil and wholegrain mustard and drizzle it over.

That’s it. A super quick salad meal in literally minutes. If you want to make this more substantial add some lovely crusty bread.

Make pea and cheese salad your way

  • Add a little spice with some freshly chopped jalapeño.
  • Fancy some meat, add some grilled bacon slices or sizzled diced chorizo scattered over the top.

How to serve the summery salad

  • Perfect as a quick lunch or one. 
  • Add a side of crusty bread and glass on wine for a simple midweek dinner.
  • Pack into lunch boxes – when I take this in a lunch box I add the dressing in a little pot next to it, and drizzle over just before eating.

Ingredients

  • 50g salad leaves
  • 1 cup peas - cooked and cooled
  • 30g feta cheese
  • 2 artichoke hearts - sliced
  • 1 tsp capers
  • 3 tsp olive oil
  • 2 tsp lemon juice
  • 1/2 tsp wholegrain mustard
  • pinch salt 

Instructions

  1. Arrange the salad leaves onto the plate.
  2. Scatter over the peas.
  3. Crumble over the feta cheese.
  4. Scatter over the capers.
  5. Top with sliced artichokes
  6. Mix up the salad dressing, add the olive oil, lemon and mustard to a small cup and whisk with a fork. And pour over the salad
  7. Season with a pinch of salt and
