Now, when it comes to sandwiches you really can’t go wrong with a sausage butty! But… wrap those sausages in bacon and you’ve got a total festive feast!

In fact… my kids would prefer this to a full on roast turkey Christmas dinner! Might cut myself some slack and let them have their way!

How To Cook Pigs In Blankets

Okay – first up, if you’re only making two of these, then get the wedges and pigs in blankets in the air fryer, it’ll be so much quicker. But if you’re making lots, to feed a big family, then it’s easier in the oven as you can do big loaded trays.

How Long Do Pigs In Blankets Take To Cook?

If you’re cooking them in the air fryer then they’ll take around 15 minutes for the mini ones. Obviously this needs to be longer for larger, thicker sausages.

If you’re cooking them in the oven then let them cook for around 30 minutes, then check if they’re cooked through properly before eating.

Pigs In Blankets Sandwich Recipe

Serves – 4 

Prep Time – 5 minutes 

Cook Time – approx 30 minutes

Total Time – around 35 minutes 

Equipment Needed For Pigs In Blankets Sandwich & Rosemary Wedges

  • Two large baking trays
  • Chopping board
  • Vegetable knife
  • Mixing bowl
  • Serving platter
  • Teaspoon
  • Tablespoon

Ingredients For Pigs In Blankets Sandwich Recipe

You’ll only need a handful of ingredients to make our delicious Christmas sausage sandwiches!

For the pigs in blankets sandwiches

  • 24 pigs in blankets – the mini ones, we used Marks and Spencer Pigs In Blankets
  • 4 tbsp cranberry sauce
  • Little Gem lettuce

For the rosemary potato wedges

  • 4 large potatoes
  • 1 tbsp olive oil
  • sprig rosemary – leaves picked and finely chopped
  • pinch salt
  • pinch black pepper

How To Make Pigs In Blankets Sandwiches With Rosemary Potato Wedges

It’s super easy to make these yummy sausage sandwiches – and really easy to scale up if you’re feeding a crowd!

Step One – preheat the oven

Step Two – prepare the rosemary potato wedges

  • Peel the potatoes and chop into wedges – aim to get 10 wedges from each potato.
  • Put the wedges into a mixing bowl, pour over the olive oil, scatter over the chopped rosemary and season with salt and black pepper. Then toss them together to coat them all in herbs and oil.

Step Three – cook the pigs in blankets and potato wedges

  • Spread the pigs in blankets out onto a baking tray.
  • Tip the rosemary potato wedges onto a separate baking tray.
  • Put them both into the hot oven and cook for around 25-30 minutes. Give the wedges a shake half way through cooking so that they cook more evenly.

Step Four – make the pigs in blankets sandwich and serve with the rosemary potato wedges

  • Split open the brioche rolls, add some lettuce leaves, load on the pigs in blankets, then top with some cranberry sauce, squash on the lid and slide onto a serving platter.
  • Tip the rosemary potato wedges into a serving bowl.
  • Serve the Christmas sausage sandwiches and wedges alongside a cranberry sauce dip and let everyone tuck in and help themselves.

  7. Make the pigs in blankets sandwiches - split open the brioche rolls, add some lettuce leaves, load on the pigs in blankets, then top with some cranberry sauce, squash on the lid and slide onto a serving platter.
  8. Tip the rosemary potato wedges into a serving bowl.
  9. Serve the Christmas sausage sandwiches and wedges alongside a cranberry sauce dip and let everyone tuck in and help themselves.
