Step One – Cook the rice and peas

  • Add the rice and frozen peas to a saucepan, add 4 cups of boiling water, bring the pan back to the boil. Once boiling, reduce the heat to a simmer and cook with the lid on for 10 minutes (or whatever the rice packet cooking instructions state)
  • Once cooked, drain in a colander.

Cooks Note – Whilst the rice is cooking get the rest of the ingredients ready and start cooking!

Step Two – cook the prawns

  • Add the sunflower oil to a wok – tip in the garlic and spring onions and cook for 2-3 minutes.
  • Next tip in the prawns and fry until they’re heated through and piping hot throughout.

Step Three – make the prawn egg fried rice

  • Once the rice is cooked and drained. Add the eggs to the pan with the prawns and stir over a high heat so they just start to scramble.
  • Then immediately tip in the hot cooked rice and peas and stir into the eggs and prawns.
  • Season the prawn egg fried rice with soy sauce to taste. And fry for a few minutes until the eggs are cooked through properly.

Step Four – serve the prawn egg fried rice

  • Divide between two bowls and scatter with chopped coriander.
