Shrimp Fajitas - 20 Minute Dinner Recipe
Cook up a batch of sizzling shrimp fajitas for your next fajita night! Spicy shrimp, with fresh crunchy salad, topped with guacamole and salsa. Dinner doesn't come much quicker and easier than this!
Our shrimp fajitas make a really tasty, quick and easy weeknight dinner. These delicious shrimp wraps are loaded with fresh vegetables and all your favourite fajita toppings, zingy guacamole, tomato salsa and jalapeños. You'll practically be eating a rainbow!

- Shrimp fajitas are a quick and tasty meal. These can be cooked and ready to eat in just minutes!
- You can add in any extras you like, leftover vegetables, chopped fruit like pineapples or mango. And you can make them spicy or mild.
- And, if you don't fancy a fajita, you can turn this into a Mexican shrimp rice bowl instead.
- Top tip! If you're cooking for kids and they're not keen on prawns, hook their prawns out and add in some sliced air fryer fish fingers instead.

- Large skillet, frying pan or wok
- Tablespoon
- Cooking spoon

INGREDIENTS FOR SHRIMP FAJITAS

FOR THE SHRIMP FAJITA FILLING

- Raw king prawns
- Olive oil - you can swap this for rapeseed or sunflower if you prefer
- Red bell pepper - diced
- Green bell pepper - diced
- Fajita seasoning - or make your own just mix up 1 teaspoon chili powder, 1 teaspoon dried cumin, 1 teaspoon smoked paprika, 1 teaspoon onion powder, ½ teaspoon garlic powder, 1 teaspoon dried oregano - and sprinkle in as much as you wish to use)
TO SERVE

- Small flour tortillas
- Little gem lettuce - washed and shredded
- Red cabbage - washed and shredded
- Guacamole - use shop bought or make your own guacamole here using ripe avocado
- Tomato salsa - use shop bought or make your own roast tomato salsa here
- Fresh coriander - roughly chopped

HOW TO MAKE SHRIMP FAJITAS
Step One - fry the peppers
- Put the frying pan over a medium heat on the hob. Add the olive oil and tip in the red and green peppers and ½ the fajita seasoning.
- Fry the peppers for around 5 minutes or until they are just starting to soften.
Step Two - add the raw king prawns to the pan
- Tip in the raw shrimp and mix them into the sizzling peppers.
- Add the rest of the fajita seasoning, season with salt and black pepper and stir fry everything over a medium heat for around 5-8 minutes or until the prawns are cooked through properly (smaller prawns will cook quicker, larger ones may take a little longer).



Step Three - serve the shrimp fajitas
- Carry the pan of prawn fajita filling to the table and serve with the warmed tortilla wraps, salsa, salad and guacamole and a squeeze of fresh lime juice and some chopped fresh cilantro. Just let everyone help themselves.

INGREDIENT SWAPS AND RECIPE TIPS
Swap the soft flour tortilla - you could turn these into shrimp bowls with Mexican rice (use a microwave packet), or shrimp tacos or use corn tortillas in place of flour ones. And if you're cutting carbs use lettuce wraps.
Add extra veggies - you can add in any extra vegetables you like, try adding in extra onions, zucchini, shredded fennel or toss in a can of black beans. You could also add a dollop of refried beans to your tortilla before loading in the shrimps.
Fancy extra toppings? - feel free to add in any of your favourite tasty fajita or taco toppings - go four sour cream, jalapeño, or any salsa or hot sauce you like.
Make it a sheet pan recipe - you can switch this into sheet pan fajitas - just lay your fajita toppings on a large sheet pan and bake in the oven instead.

Ingredients
For the prawn fajita filling
- 350g raw king prawns
- 1 tablespoon olive oil
- 1 red pepper - diced
- 1 green pepper - diced
- 1 tablespoon fajita seasoning
To serve
- 8 mini flour tortillas
- 1 little gem lettuce - washed and shredded
- ¼ red cabbage - washed and shredded
- 200g guacamole
- 200g tomato salsa
- handful of coriander leaves
