This is one of my favourite quick and easy pasta recipes to cook. It’s super flavoursome and really easy to prepare and cook. Just what’s needed for busy weeknights.

bowlful of spicy prawn spaghetti with spinach and chillies

Prawn Pasta Ingredients

  • 1 tbs olive oil
  • 1 clove of garlic – finely chopped
  • 1 red chilli – finely sliced, you can deseed the chilli too if you prefer your pasta dish to have less of a spicy kick!
  • 300g raw king prawns
  • 10 sun dried tomatoes – roughly chopped, I usually buy a jar of antipasti tomatoes for this recipe or pick some up from the deli-counter.
  • 2 cups of baby leaf spinach – roughly chopped
  • zest of a lemon
  • pinch sea salt
  • pinch cracked black pepper

How to make spicy prawn pasta

  • Firstly, put the spaghetti into a pan of salted boiling water and whilst it simmers away prepare the sauce.
  • Add a splash of olive oil to a large frying pan, tip in the garlic and chilli and cook for a minute, then add the chopped sun dried tomatoes and prawns. Fry for 5-6 minutes until everything is heated through and cooked properly.
  • Drain the spaghetti and toss it through the sauce along with the chopped spinach. The spinach will wilt in the heat. Serve in warmed bowls and scatter with lemon zest and lots of black pepper.

How to make spicy prawn pasta differently

  • skip the chilli and add a spoonful of pesto for a milder flavour
  • switch spinach for rocket or other greens.
  • save time on chopping and buy sun dried tomato paste and just add a good squirt.
