Pumpkin Hummus

Use the pumpkin flesh from your Halloween Jack’O’Lantern to make the most delicious roast pumpkin hummus.

You can make our delicious, easy roasted pumpkin hummus recipe using the discarded flesh from carving your Jack-O-Lanterns or buy a butternut squash or small culinary pumpkin instead.

It’s a super easy recipe, bursting with flavour and a great way to use up waste.

We just use the roasted pumpkin pieces and a pinch of spice to flavour up our basic hummus recipe.

Equipment Needed

  • Chopping board
  • Sharp knife
  • Lemon juicer
  • Roasting tin
  • Tablespoon
  • Teaspoon
  • Food processor or hand held blender

Pumpkin Hummus Ingredients

You’ll just need the basic hummus ingredients, pumpkin and your chosen spice to make our easy roasted pumpkin hummus recipe.

  • 200g pumpkin – or you can use squash or even sweet potatoes
  • 2 tbsp olive oil
  • 400g can of chickpeas – drained
  • 1 tbsp light tahini
  • 1/2 tsp garlic powder
  • 1 lemon – juiced
  • Pinch salt

How To Make Pumpkin Hummus

It’s super easy to make any hummus recipe! Quick, simple and delicious!

Step One – dice the pumpkin

  • Remove any pumpkin skin and dice the pumpkin flesh into small pieces so that they roast fast.

Step Two – roast the pumpkin

  • Preheat the oven to 200C / 400F / Gas Mark 6
  • Toss the diced pumpkin in 1 tbsp of the olive oil and sprinkle over the seasoning.

Cooks Note! The other tablespoon of olive oil goes into the blender with the hummus ingredients later.

  • Tip into a roasting tin and roast in the oven for around 20 minutes or until tender.

Step Three – whizz the pumpkin hummus up in a blender

  • Tip all the ingredients along with the roasted pumpkin into a food processor and blitz until you have a smooth, hummus texture. Check the seasoning and add more salt if needed.

Step Four – serve the flavoured hummus

  • Tip the hummus into a serving bowl and serve with your favourite things to dip!

Makes a great lunchbox recipe and is perfect as an after school snack or as a party dip.

Dip Toppers

If you like you can add a sprinkling of hummus toppers to your serving bowl.

Delicious ideas to try are – a pinch of smoked paprika, toasted pine nuts, whole chickpeas, toasted sesame seeds or even just a drizzle of pesto or olive oil.

A super easy recipe for roasted pumpkin hummus - totally delicious!

Ingredients

  • 200g pumpkin flesh
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 400g can chickpeas
  • 1 tbsp tahini paste
  • 1/2 tsp garlic powder
  • 1 lemon - juiced
  • Pinch salt
