Puy Lentil Salad With Feta Cheese

Our super easy Puy lentil salad with feta cheese made using Merchant Gourmet microwave lentils is just the easiest and tastiest way to make a great lentil salad.

I just LOVE the convenient little microwave lentil packs, they’re super easy to cook if you want a warm salad, or you can eat them cold straight from the pack.

They’re just such a great base for making a healthy nutritious salad – flavourful and really simple to mix with other ingredients for a delicious lentil salad recipe.

Ingredients For Puy Lentil Salad With Feta Cheese

  • 1 tbs olive oil
  • 2 sweet potatoes – peeled and diced into small bitesized cubes
  • 100g feta cheese – cubed
  • 6 cooked baby beetroot – sliced or quartered

  • Sharp vegetable knife
  • Small roasting tin
  • Tablespoon
  • Serving bowl

How To Make Puy Lentil Salad With Feta Cheese

It’s super simple to make this delicious vegetarian recipe!

  • Preheat the oven – to 200C / 400F / Gas Mark 6
  • Roast the sweet potatoes – toss the diced sweet potato cubes in the olive oil and then spread them in a single layer in a small roasting tin. Roast in the oven for around 15-20 minutes or until tender.
  • Heat the lentils – cook the Puy lentils as per the packet instructions in the microwave.
  • Put the salad together – toss the sweet potatoes, Puy lentils, baby beetroot and feta cheese together in a serving bowl – scatter over some torn basil leaves.

NOTE – if making this for packed lunches don’t heat the lentils use them cold straight from the sachet and wait until the roasted sweet potatoes are fully cooled before putting the salad together.

What To Eat With Lentil Salad

You can serve our delicious lentil salad recipe just as it is. Or you can really make more of a meal of it, add a few extra bits.

  • Serve with crusty French baguette spread thickly with salted butter and maybe a glass of French red.
  • Serve as a side dish to garlicky roast chicken and roasted baby carrots.

  • 250g Puy lentil - ready to eat sachet
  • 60g feta cheese - cubed 
  • 6 baby beetroot - cooked and sliced
