Equipment Needed 

Ingredients For Cheeseburger Tacos

You’ll just need a handful of ingredients to make the cheeseburger ground beef filling, and then all your favourite burger toppings!

Ingredients for cheeseburger tacos including; a bowl of grated cheddar cheese, a bowl of beef mince, wraps, a bowl of iceberg lettuce, a bowl of gherkins, a bowl of red peppers, a plate with spices on, a small bowl of olive oil, a bowl with ketchup and mayo in

For the cheeseburger ground beef filling

  • 1 tbsp olive oil
  • 1lb ground beef
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • Pinch of salt
  • Pinch of black pepper
  • 1 cup grated Cheddar cheese

For the homemade burger sauce

  • 1/2 cup mayonnaise
  • 1/4 cup tomato ketchup
  • A splash of dill pickle juice – to taste

To serve

  • 8 mini flour tortillas
  • 1 cup shredded lettuce
  • 2 vine tomatoes – deseeded and diced
  • 1/4 cup burger pickles

How To Make Cheeseburger Tacos 

These delicious burger tacos are super simple to make, quick to prep, quick to cook, making them great for weeknight dinner.

Step One – season and fry the ground beef taco filling

  • Add the olive oil to a skillet pan over a medium heat.
  • Tip in the ground beef and break it up using a wooden spoon.
  • Add in the onion powder, paprika, garlic powder, a pinch of salt, and pinch of black pepper.

Step Two – fry the burger filling, then melt on the cheese

  • Fry the ground beef until it’s browned on the outside and cooked right through (should take around 10 minutes)
  • Once cooked through, scatter with the grated cheese and leave it to melt into the ground beef (a bit like you would when you top a burger with cheese)

Whilst the cheeseburger meat is cooking, make up the burgers sauce

Step Three – make the burger sauce

  • Mix the mayonnaise with the ketchup, and add pickle juice from the burger pickle jar – add a splash at a time, mix and taste until you get it just how you like it.

Step Four – serve the cheeseburger tacos

  • To serve your cheeseburger tacos – warm the mini tortillas, then add shredded lettuce, top with the cheeseburger meat, drizzle over the burger sauce and add the chopped tomatoes and burger pickles.

Can I Use A Different Ground Meat? 

You can make these cheeseburger tacos using any ground meat you like – we like them made with ground turkey for a lighter, lower fat version.

You can load up cheeseburger tacos with all your favourite burger (or taco) toppings. Just choose your favourites and sprinkle them on.

Try bacon bits, guacamole, salsa, blue cheese, ranch dressing, just mix and match and create your favourite version.

Yes, you absolutely can make the cheeseburger taco meat ahead of time – so this is easy to make the day before you want to eat it. Just don’t melt on the cheese, do that when you reheat it just before serving.

Storing, Reheating & Using Up Leftovers

How To Store Cheeseburger Taco Filling

Our delicious taco meat can be cooled, and stored in an airtight container in the refrigerator for up to 2 days. Or freeze in a suitable container in the freezer for up to 3 months.

Defrost the ground beef thoroughly before reheating. I usually defrost it in the fridge overnight.

If making ahead of time, don’t add the cheese until you reheat.

How To Reheat Cheeseburger Taco Filling

Pour the taco meat into a saucepan and reheat on the hob, over a low to medium heat. Stirring every so often. Heat until the meat is a minimum of 75C throughout.

Alternatively reheat in the microwave – pour taco meat into suitable microwavable container, heat on high for 2 minutes, stir carefully, then continue to heat and stir after every 2 minutes of heating, until heated properly throughout to a minimum of 75C.

How To Use Up Cheeseburger Taco Meat

You can use up leftover taco meat to fill savoury hand-pies (pasties). Or you could turn it into dirty rice, and simple reheat and stir through some cooked rice, sprinkle with grated cheese and plenty of chopped fresh herbs and a scattering of chopped green chiles.
