A quick and simple recipe for a delicious supper dish. Our cheesy mushrooms on toast is ideal as a late night snack or quick and easy lunch recipe.

Mushrooms on toast is a tasty, quick and easy vegetarian recipe. It’s easy enough to make as a late night snack, perhaps alongside a cold beer.

I love how easy it is to take something simple add a little twist and turn it into a gourmet treat.

Just five ingredients are needed to make this simple meal. It’s not only perfect for lunch but as a quick and easy weeknight dinner maybe with a simple salad of watercress tossed with lemon juice or a little mound of freshly made coleslaw.

To make our mushrooms on toast a little bit special put a little thought into your ingredients.

Choose a nice bread, a good quality granary, seeded loaf or tasty sourdough, whatever you like to eat is good – I’ve used a wholemeal bread with pumpkin seeds.

The cheese I use for this recipe is Y-Fenni which is a Welsh cheese, a delicious blend of cheddar with mustard seed and real ale. This cheese is a total treat melted onto toast or included as part of a cheese board.

If you can’t find Y-Fenni cheese you could also use a mature cheddar or a nice Wensleydale studded with cranberries.

Makes enough for two people

  • 4 slices of bread – choose your favourite bread – sourdough, granary or seeded all work well.
  • 30g Butter – I usually use salted butter for this recipe, it just adds a little more flavour.
  • 300g mushrooms – peeled and sliced
  • 150g Y-Fenni Cheese – grated
  • Small bunch of flatleaf parsley – you could swap this for chives or even dill if you prefer

How to make cheesy mushrooms on toast

  • Add the butter to a frying pan and once it melts quickly fry the mushrooms over a medium/high heat.
  • Whilst they cook heat the grill to high – toast the bread on one side, then remove from the grill and butter the none toasted side.
  • Top the buttered side of toast with the hot cooked mushrooms and scatter over the grated cheese.
  • Return to the grill and cook until the cheese is melted and browning.
  • Scatter with finely chopped flat leaf parsley.

  • Don’t like mushrooms try finely sliced courgettes or peppers.
  • Want some meat – add some crispy bacon
  • Don’t fancy bread – use a tortilla or seeded wrap.

Ingredients

  • 4 slices of bread

  • 150g grated cheese

  1. Add a small knob of butter to a frying pan and quickly fry the mushrooms.
