Our Quick Veggie Rice is a tasty, healthy, vegetable packed rice dish that’s ideal for serving alongside loads of different family dinners! 

Our quick and easy Veggie Rice is totally loaded with colourful tasty vegetables.

It’s a great way of squeezing in a portion or two of your five-a-day.

And best of all it’s super easy to make and ready in less than 15 minutes. 

AND the kids love it!

Veggie Rice Ingredients

  • 1 cup rice – use long grain or basmati
  • 1 tbsp olive oil – you can swap this for rapeseed or sunflower oil if you prefer
  • 1 red onion – finely chopped
  • 2 red peppers – diced
  • 1 cup frozen peas
  • 1 cup frozen sweetcorn
  • 1 tsp ground cinnamon
  • Salt and black pepper – to season

Equipment Needed

  • Cup
  • Chopping board
  • Vegetable knife
  • 2 x saucepans – with lids
  • Colander
  • Teaspoon
  • Spatula – or wooden spoon for cooking

How To Make Veggie Rice

  • Cook the rice as per the packet instructions – this should take around 10 minutes.
  • Cook the frozen peas and sweetcorn as per the packet instructions
  • As the rice, peas and sweetcorn cook add the olive oil to a large frying pan over a medium heat.
  • Toss in chopped peppers and onions and fry until all the vegetables are softened.
  • Sprinkle over the tsp of cinnamon powder into the onions and peppers and mix well.
  • Drain the rice, peas and sweetcorn using the colander and tip into the veggies, stir gently to mix everything together.

Mix Things Up A Little And Make Veggie Rice Your Way

  • Throw in whatever veggies you like – try diced courgette, aubergine, spring onions, spinach all work well. 
  • Add in some fresh chopped herbs – coriander, flat leaf parsley and chives are all good. 
  • Skip the cinnamon altogether or switch it for ground cumin, smoked paprika or even a little pinch of curry powder.
  • Stir through a couple of tablespoons of your favourite pesto to add some extra flavour – I like to use the Sacla Sun Dried Tomato Pesto for this recipe.
  • Don’t fancy cooking rice? Cheat and pick up a couple of microwave rice sachets, pick any flavour you fancy.

How To Serve Veggie Rice

  • Serve alongside grilled chicken or fish.
  • Serve as a side dish as BBQs
  • To serve as a main course dish add in some peanuts, tofu, chicken pieces or just top with poached eggs.
