I’ve taken full advantage of it being Italian week at Lidl and stocked up on lots of Italian goodies so that I could have a play around with some really inexpensive quick family pasta dishes.
First up is this super tasty quick pasta sauce with chicken and olives. This is made using leftover roast chicken from the Sunday roast – it’s really economical to turn a little bit of leftover chicken into a family meal, you really have to LOVE YOUR LEFTOVERS.
You only need a couple of handfuls of leftover chicken for this so be sure to pick every scrap off the chicken – use the meat from the thighs, wings and breast. If you don’t think you’ve got quite enough meat then throw in a tin of borlotti beans just to fill out the sauce a little more.
The quick pasta sauce is simple – heat a splash of olive oil in a large wok style pan, tip in the chicken and briskly fry for 5 minutes. Then add the tin of tomatoes – I use the Lidl Tomatoes with chilli, they just add some extra flavour with no extra work. You can also buy the Lidl tinned tomatoes with basil, italian herbs and garlic and onion – so just pick which one you like best. Bring the sauce to the boil and then reduce the heat – add a handful of olives and cook for around 15 minutes.
Whilst the sauce is bubbling away cook the spaghetti – I used the Lidl tomato spaghetti which was really nice! Just drop into a pan of boiling salted water with a drizzle of oil to stop it sticking. Bring the pan back up to the boil and cook for around 8 minutes.
All that’s left to do is drain the spaghetti, add it to the sauce and mingle the whole lot together.
I like this served with steamed broccoli or a quick rocket salad.
