This recipe is one of my favourite salads. It’s a simple Italian style rocket salad with Parmesan cheese and pine nuts. Simply dressed with extra virgin olive oil, lemon juice and sea salt.

Whenever I make a pasta dish I like to add this salad on the side. It’s super simple to make and tastes absolutely delicious. The peppery rocket pairs so well with the Parmesan cheese and pine nuts.

It’s also delicious served as a side salad to bruschetta or grilled chicken. Honestly, you’ll just love how simple it is to make and just how good it tastes for next to zero effort!

And if you’re reading from America – this is a simple arugula salad recipe as rocket is known as arugula there.

Rocket Salad Ingredients

You’ll just need a handful of simple, delicious ingredients to throw together this Rocket Parmesan Salad

  • 100g rocket leaves
  • 30g pine nuts
  • 30g parmesan cheese
  • 1 tbsp extra virgin olive oil
  • 1/2 lemon – juiced
  • Pinch sea salt

Equipment Needed

  • Colander
  • Chopping board
  • Tablespoon
  • Frying pan
  • Salad bowl
  • Grater

How To Make Italian Rocket Salad Recipe

You’ll love how simple this arugula salad is to throw together.

Step One – wash the salad rocket leaves

  • Tip the rocket leaves into the colander and wash well in salted water then rinse under clean running water. Then shake and leave to dry in the colander or spin in a salad spinner.

Step Two – toast the pine nuts

  • Put the frying pan on to the hob over a medium heat – don’t add any oil. Then toss in the pine nuts and toast in the pan – shake regularly until they start to turn golden. Then tip them onto a plate until ready to use.

Step Three – assemble the Rocket and Parmesan salad

Put the rocket leaves into a salad bowl – drizzle over the extra virgin olive oil and lemon juice. Then season with sea salt. Toss the salad together to coat the leaves.

Cooks Note! As an alternative rocket salad dressing you could use a tasty Balsamic drizzle – the sweetness works well with Rocket. We just adore the Little Doone Sweet Balsamic Dressing with rocket, just so good!

  • Next scatter over the pine nuts and grate over the the Parmesan shavings.
