Sardines On Toast
Sardines on toast is my go-to for a cheap, easy meal when I’m in a rush! It’s like a little taste of the Mediterranean and packed with Omega-3 – win-win!
You can keep it super basic or fancy it up a bit, but either way, it’s one of those quick, store cupboard meals that always hits the spot.
MAKING SARDINES ON TOAST IS A GOOD THING!
- It's a store cupboard recipe, you can make in minutes so even on a busy day, supper is simple to make.
- Tinned sardines are a great way to pack in some Omega-3 and it's low cost!
- You can go plain and simple sardines on toast, or really throw together a Mediterranean feast with tinned Spanish sardines, whichever you like!

EQUIPMENT NEEDED
- Chopping board
- Knife
- Frying pan
- Toaster or grill
This is a really easy lunch recipe, quick, simple and do tasty!
SARDINES ON TOAST INGREDIENTS
You'll just need five simple ingredients to make this easy, light lunch recipe of fish on toast.

- Can of sardines - we use the Parmentier sardines in olive oil with chillies - it's best to use tins of sardines in olive oil if you can as they taste nicer especially with the olive oil drizzled on the toast. We think these are just the BEST tinned sardines!
- Slices of sourdough bread - you can use any bread you like - granary, white bloomer, seeded batch or rye bread all work well with sardines.
- Sun dried tomatoes - roughly chopped
- Small bunch basil leaves - roughly torn
- Lemon - cut into wedges
HOW TO MAKE SARDINES ON TOAST
This is a super simple meal to make, literally ready in just minutes and tastes so good! Can't beat pan fried sardines!
Step One - heat up the tinned sardines
- Put the frying pan onto the hob over a medium heat.
- Tip the tinned sardines into the frying pan along with the olive oil and chilli.
- Gently fry them until they're heated through thoroughly.
Step Two - toast the bread
- Pop the bread into the toaster and toast until lightly brown.


Step Three - make the sardines on toast
- Put the toast onto a plate (butter if you like) lay on the hot sardines from the pan.
- Scatter over the chopped sun dried tomatoes, drizzle over some of the olive oil from the pan.
- Sprinkle on the torn basil, some sea salt and cracked black pepper (to taste)
- Serve straight away, with lemon wedges so you can add a little squeeze of fresh lemon juice, it's far too good to wait.

Hey, this is your dinner, add any twists you like to the recipe and make it the way you want!
Mashed Sardines On Toast
Like your fish on toast mashed? Grab a fork and mash it into the bread. This sardine mixture is nice with a little sprinkling of finely chopped fresh parsley, red onion or capers too.
Add Some Garlic
For a bruschetta style twist, rub a clove of raw garlic over the toasted bread before adding the tinned sardines and oil.
Sardines Breakfast Style
If I'm making sardines on toast for breakfast or brunch, I usually do them on toasted white bloomer, buttered, then topped with sardines and a poached egg. It works for me! And oily fish is good for including in a healthy diet.
