Our easy sausage salad is perfect for a quick and easy low fuss family dinner. It’s super easy to throw together AND you can prepare it all ahead of time and just pull it from the fridge when you’re ready to eat.

Summer Sausage Recipe

Kids just seem to LOVE sausages! But it’s way to hot for bangers and mash in the summer so I’ve created a delicious sizzling sausage salad recipe with new potatoes and a sweet honey and mustard dressing.

Best of all it’s super easy to make and you can make it with whatever your favourite sausages are!

Such a lovely dish for eating in the garden or taking for picnics.

Sausage Salad Ingredients

You’ll just need a handful of ingredients to make our easy sausage salad recipe.

  • 12 sausages – I use Heck pork sausages as they’re the kids favourite and such great quality!
  • 750g new potatoes
  • 125g bag crunchy salad – I use Florette Rainbow Crunchy because it’s packed with robust flavours that mingle well with potatoes and sausages.
  • 1/2 cucumber – sliced into half moons
  • 1 yellow pepper – sliced into strips
  • 3 tbs honey and mustard salad dressing

Equipment Needed

  • Roasting tin
  • Chopping board
  • Sharp knife
  • Saucepan
  • Large serving bowl
  • Tablespoon

How To Make Sausage Salad

You are just going to LOVE how easy it is to make this easy cold sausage recipe!

  • First up – cook the sausages – do this as per the packet instructions. Once they’re cooked and cooled slice them and pop them in the fridge until you’re ready to make your salad (they’ll keep for up to 24 hours in the fridge once cooked)
  • Boil the potatoes – chop the potatoes into bitesized pieces and boil in salted water for around 8 minutes or until just tender. Then drain in a colander and rinse under cold water to cool them quickly. Store them in the fridge until ready to use. Again they’ll keep good in the fridge for around 24 hours.
  • Take a large serving bowl – add the bag of salad leaves
  • Tip in the cucumbers and peppers

  • Add the potatoes to the salad

  • Tip in the sliced sausages

  • Drizzle over the honey and mustard dressing

  • Toss the salad together – gently so that everything is coated in dressing, then serve.

There’s loads of ways you can adapt this recipe to suit your own tastes or dietary requirements. Try…

  • Chicken sausages – swap the pork sausages for chicken sausages for a lighter dish.
  • Go vegetarian – use veggie sausages for a meat free salad.
  • Swap the dressing – use any dressing you like, it’s super tasty with blue cheese dressing or even a spicy tomato salsa.
  • Make it faster! – use cold smoked ready to eat sausage from the supermarket – or even hotdogs. And add tinned cooked potatoes instead of boiling your own.

What To Eat With Sausage Salad

Our sausage salad is a really filling salad… BUT… when I make this for my teens I do add a side of smoky tomato rice and some garlic baguette because teens are always ravenous!

How to make quick and easy smoky tomato and corn rice

  • 2 packs microwave white basmati rice
  • 4 tsp smoked paprika tomato pesto (or use any other pesto you like)
  • 1 small tin sweetcorn

Just cook the rice in the microwave and then stir it together with the sweetcorn and pesto – that’s it! Super easy rice!
