SKIPPY® Peanut Butter Chicken Skewers Ingredients
You'll just need a handful of delicious ingredients to make our yummy chicken skewers recipe

- 3 tablespoon SKIPPY® Peanut Butter - we use the smooth variety
- 3 tablespoon sweet chilli sauce
- 200ml coconut milk
- 500g diced chicken breast
- 2 x 250g microwave basmati rice
- 1 cup frozen peas
- 1 cup frozen sweetcorn
- ½ cucumber - sliced
- 4 spring onions - chopped - you can do this with scissors to make it easier
- bunch coriander - roughly chopped - you can do this with scissors to make it easier
COOKS NOTE! Put the wooden kebab sticks into a jug of water to soak for at least 2-3 hours before using to make the chicken skewers, this will stop them splintering as you thread the chicken, and stop them from burning as much whilst they're cooking.
How To Make SKIPPY® Peanut Butter Chicken Skewers With Easy Vegetable Rice
Step One - prepare all the vegetables
- Wash and slice the cucumber - pop in a bowl to one side for later.
- Wash and chop the spring onions and coriander. Kids might find this easier to do with scissors. Again, pop them in a bowl on one side for later.
Step Two - mix up the SKIPPY® peanut butter chicken marinade
- Tip the SKIPPY® peanut butter, sweet chilli sauce and coconut milk into a small mixing bowl and stir well with a spoon until it's all smooth and creamy.

- Then pour around ⅓ of the peanut butter chicken marinade into a separate bowl or jug, ready to serve over the cooked chicken skewers later.
Step Three - make the chicken skewers
- Preheat the oven to 200C / 400F / Gas Mark 6
- Take the skewers and thread the chicken pieces onto them - aim for around 4-5 pieces of chicken per kebab stick. Put the kebabs onto a plate.

COOKS NOTE! Be sure to wash hands after handling raw chicken!
- Tip the marinade over the chicken kebabs and turn them over in the sauce to coat all sides of the chicken.

- Lay the chicken skewers onto a baking tray evenly spaced so they cook better.

Step Four - Cook the SKIPPY® Peanut Butter Chicken Skewers
- Place the chicken skewers into the oven and cook for 15 minutes.
- Then remove the tray from the oven, turn the chicken kebabs over and return to the oven for a further 15 minutes or until cooked through properly with no pink meat remaining and so that the juices are running clear. If you have a cooks thermometer check the internal temperature of the chicken pieces is a minimum of 75C.
Step Five - Make the vegetable rice
When the chicken kebabs have around 5 minutes cooking time left - make the vegetable rice.
- Cook the frozen peas and sweetcorn in boiling salted water as per the packet instructions. Then drain.

- Heat the microwave rice in the microwave as per the packet instructions. Then open and tip into a large mixing bowl.
- Tip the cooked peas and corn into the mixing bowl.

- Mix the peas and sweetcorn into the rice.

Step Six - serve the SKIPPY® Peanut Butter chicken skewers and rice

- Divide the rice between the serving plates and lay two chicken skewers onto each plate.
- Add a little pile of cucumber slices on the side of each plate.

- Then drizzle over the SKIPPY® peanut butter chicken marinade that you saved right at the beginning of the recipe.

- And scatter over the chopped spring onions and coriander.

- Then serve straight away!
