Step One – Preheat the slow cooker

  • The slow cooker should be preheated on the low setting – this gives a cooking time of around 6 hours.

Step Two – Add all the ingredients

  • In a slow cooker pan, combine all of the ingredients: canned chopped tomatoes, diced chicken breast, chopped peppers, diced onions, minced garlic and onions, and the curry paste.

  • Season with salt and black pepper and then give all of the ingredients a thorough mixing with a cooking spoon to ensure that all of the flavours are thoroughly combined.

Step Three – Cook the slow cooker chicken curry

  • Placing the slow cooker pan onto the slow cooker base and cooking for around 5-6 hours on low will create a delicious chicken curry meal. Before serving, make sure the chicken is piping hot all the way through and has been cooked properly.

Can you put raw chicken in a slow cooker?

Yes, you can put raw chicken in the slow cooker, which is why our dump and go slow cooker recipes are so popular! It allows you to spend less time preparing food and more time doing other things.

In the slow cooker, raw chicken will take about 5-6 hours to cook. To be safe, always verify that the core temperature of your chicken is at least 76 degrees Celsius before eating.

How do you thicken chicken curry in a slow cooker?

If the chicken curry requires thickening, a couple of teaspoons of cornflour combined into a paste with cold water can do the trick. Cook for a few minutes, stirring constantly, until the sauce thickens.

Can you overcook chicken in the slow cooker?

It is possible to overcook chicken in the slow cooker; in fact, it is rather easy to do so! We recommend inspecting the chicken after 4-5 hours to ensure it is fully cooked.

To freeze chicken curry, it must be cooled rapidly after cooking, within no more than two hours. Then store in freezer-safe containers that are clearly labelled with the date.

Defrost the chicken curry overnight in the refrigerator and check to ensure it is completely defrosted before re-heating.

Reheat the curry in the microwave or in a saucepan over the stove. Stir often to prevent uneven heating and to ensure that the chicken reaches a minimum core temperature of 76C.
