Slow Cooker Ginger Beer Chicken

Super simple yet utterly delicious, our ginger beer chicken is quick and easy to prepare and tastes amazing served with rice and green vegetables. Perfect for busy evenings.

Ginger Beer Chicken is an amazingly easy, low effort slow cooker chicken recipe. Just throw a few simple ingredients into the slow cooker in the morning and come home to a tasty meal you’ll all love.

The ginger beer in our slow cooker chicken dish gives the sauce a delicious Oriental style flavour so it’s nice served with simple boiled rice and steamed green vegetables.

Or if you’re short on time and energy, then ping a couple of sachets of microwave egg fried rice and a bag of frozen veggies to serve alongside the ginger beer chicken.

You could make our ginger beer chicken in the oven or even on the hob if you prefer – I’ll give the method for that further down.

Ginger Beer Chicken Ingredients

You’ll just need a handful of ingredients to make this yummy slow cooker chicken stew

  • 2 cloves of garlic – finely chopped, or use garlic powder or even a 1/2 tsp or jarred chopped garlic.
  • 1 onion – roughly chopped, I just use a regular brown onion for this recipe.
  • 4 chicken breasts – I cook them whole, but if you prefer you can cut them into bitesized pieces. I just like the low fuss, lazy prep of keeping them whole.
  • 2 tbs tomato ketchup
  • 1 tbs soy sauce
  • 400ml ginger beer
  • 2 tsp cornflour – just mixed in a drop of cold water to thicken the sauce just before serving.

Slow Cooker Method

  • Preheat the slow cooker to low.
  • Throw in the garlic and onions and lay the chicken breasts on top.
  • In a jug mix together the ketchup, soy sauce and ginger beer and then pour over the chicken.
  • Cook on low for 7-8 hours or until the chicken is thoroughly cooked through.
  • Once cooked, remove the chicken, then mix together the cornflour with just a drop of cold water and stir into the sauce to thicken it.

Oven Method

  • Chop the onions and chicken into bitesized pieces, grate the garlic, place into a small oven proof dish.
  • Make a sauce with the ketchup, soy sauce and ginger beer and pour it over the chicken and onions – cover and bake in the oven on 180C for around 60-90 minutes or until the chicken is cooked through properly. Check the casserole after an hour and top up with more liquid if it needs it.

Hob Method

  • Do the same as for the oven method, except cook over a low heat on the hob for around 30 minutes. Until the chicken is cooked through properly.
