Our easy Slow Cooker Sausage Casserole is so simple and makes the perfect cosy dinner for this time of year, it’s warming, filling and oh so good with a side of cheesy mashed potatoes.

Slow cooked sausages simmered in a gravy casserole sauce is such a delicious, easy family dinner. And if there’s one thing that guarantees empty plates here it’s bangers and mash! It’s one of our favourite meals with sausages!

Serves – 4 people 

Prep Time – 15 mins 

Cook Time – 4 hours  (on the high temperature setting)

Total Time – around 4 hours 15 minutes

Slow Cooker Sausage Casserole Ingredients

You’ll only need a handful of ingredients to make this easy Sausage Casserole Slow Cooker recipe!

  • 12 chipolatas – choose any pork sausages you like, spicy, herby, flavoured, just get good quality sausages, with high meat content.
  • 1 onion – diced
  • 4 carrots – peeled and sliced
  • 2 sticks celery – sliced
  • 1 tbsp tomato puree
  • 1 beef stock pot – we use Knorr stock pots

How To Make Slow Cooker Sausage Casserole

You are going to really love how simple this recipe is, it’ll be simmering away in the slow cooker in literally minutes!

Step One – brown the sausages

  • Preheat the slow cooker to high
  • Put the frying pan over a medium-high heat and brown the pork sausages, turn them often and get some colour on each side.

Cooks Note! Browning the sausages is key! If you don’t colour them up in a frying pan before slow cooking they just look not nice! Really, spend the extra 10 minutes and get some colour on your bangers!

Step Two – load the slow cooker casserole ingredients into the slow cooker pan

  • Add the carrots, celery, onions, tomato puree and beef stock pot to the slow cooker pan, add the browned sausages and season with salt and black pepper if using.
  • Then pour over 300ml of boiling water and mix gently to dissolve the stockpot into the casserole ingredients. Stir and then put the lid on.

Step Three – cook the sausage casserole in slow cooker

  • Cook the sausage stew in the slow cooker on high for around 4 hours. If cooking on low it’ll take around 7-8 hours.

Cooks Note! All slow cookers are slightly different temperatures and sizes and so food can cook at slightly different times. The best way to check food is heated through and cooked properly is by using a food thermometer.

What To Serve With Slow Cooker Sausage Casserole

First up choose some carbs!

  • Crusty bread
  • Dumplings – especially if you make them at home and add Cheddar cheese to the dumpling mixture. SO GOOD!

Second – add some more veggies – just cooked from the freezer is great!

I get it, when you’re cooking for a family, the urge to add a side of veggies is strong! So for simplicity just add a side of frozen peas, sweetcorn or broccoli.

Freezer vegetables are a great way of squeezing an extra portion of veggies into kids diets.

How To Bulk Up A Slow Cooker Casserole To Feed More People

When you cook from scratch it means you can easily bulk up meals with added ingredients when you need to!

  • Add more vegetables – a diced swede, sweet potatoes, mushrooms, bell peppers or butternut squash are great in a sausage casserole.
  • Add in some pulses – tip in a can of butter beans or lentils to stretch the meal further.
  • Chop up the sausages – if you’re bulking up the casserole, chop the sausages into small pieces, that way they’re easier to share out.
  • Serve with double carbs – serve the meal with mashed potatoes and bread to help stretch the meal out.

Herbs And Seasonings To Try Adding To Your Sausage Casserole

We just LOVE the basic pork sausage slow cooker stew, it’s super simple, and always a hit with the kids. But you can add in some extras if you like.

Try adding income extra herbs – some mixed herbs – dried, some fresh thyme or a handful of chopped flat leaf parsley as you serve.

You could also add a splash of Worcestershire sauce, or crushed cloves of garlic. And if you wanted, you could add some tinned chopped tomatoes or go creamy, and stir a splash of cream through the gravy sauce.

A super easy slow cooker sausage casserole recipe - great for family dinner!

Ingredients

Notes

Cooks Note – if the gravy needs thickening do this with a couple of tsp of cornflour mixed into a paste with cold water and then stirred through the gravy and cooked for a few minutes to thicken.
