Smashed Avocado Toast With Egg

Smashed avocado toast with egg is one of my favourite, quick and easy go-to lunch ideas. Super simple to make and totally delicious to eat!

When I'm working from home this is my absolute favourite lunch to make.

Sourdough toast, smothered with smashed avocado, topped with grated hard-boiled egg and just a little drizzle of hot chilli sauce.

It's the perfect easy lunch. It's great for weekend brunch to, if you're feeling all fancy! Just one of the best egg recipes, so simple.

  • Toaster
  • Saucepan
  • Butter knife
  • Plate
  • Chopping board
  • Sharp knife
  • Fork
  • Grater

Ingredients For Smashed Avocado Toast With Egg

You'll literally just need three ingredients to make our smashed avocado on toast recipe - and then anything you fancy sprinkling or drizzling on top!

  • 2 slices sourdough bread
  • Avocado
  • 1 large egg

Optional toppings

I love simple avocado toast with egg topped with a drizzle of hot chilli sauce, salt and pepper. But it's also great with chilli flakes, hot chilli honey, a drizzle of flavoured olive oil, chopped cress or flat leaf parsley... or any of your favourite sauces.

How To Make Egg Avocado Toast

You'll love how simple this avocado toast is to make!

Step One - boil the egg

  • Put the egg into a saucepan and fill up with cold water. Put on the hob and bring the water to the boil over a high heat.
  • Once the water is boiling, turn down the heat to a rolling simmer and cook for around 6-7 minutes.
  • Then lift the egg out of the hot water using a spoon and plunge into cold water for around 5 minutes to cool it down so you can handle it.

Step Two - make the smashed avocado toast

  • Toast the bread to your liking.
  • Slice the avocado in half, remove the stone and scoop out the flesh with a spoon.
  • Mash half an avocado onto each slice of toast. Use the fork to smash it up into the toasted bread.

Step Three - grate the hard boiled egg

  • Remove the shell from the hard boiled egg and then grate the egg over the avocado toast.

What To Serve With Egg Avocado Toast

Smashed avocado toast is a little power house of a lunch! One of your five a day, protein from the egg and sourdough is low GI so keeps you full for longer.

When I'm serving up this for lunch I usually add in a side of fruit, maybe yogurt and a handful of nuts.

Egg Avocado Toast Recipe Variations

Hey, this is your toast, you add in anything you fancy eating. I've popped some of my favourites below for inspiration!

  • Add crispy bacon and a drizzle of maple syrup or hot honey
  • Add some freshly chopped chillies or candied jalapeño
  • Slide on some garlicky fried mushrooms.
  • Crumble over some tangy feta cheese and chopped flat leaf parsley.
