Spaghetti with tuna and green beans is a super healthy and super delicious family dinner. Think of this as a tuna bolognese.
And… if I call it tuna bolognese it’s always a big hit with the kids. A really lovely family dinner and one that can be on the table in less than 30 minutes, making it brilliant for a weeknight.
The spaghetti and green beans are cooked together and as they cook it’s super easy to whip up a pan of rich tangy tomato and tuna sauce. Just add a splash of olive oil and gently fry the garlic for a moment then tip in the tinned chopped tomatoes, tuna and black olives and simmer until the spaghetti and beans are cooked.
Drain the spaghetti and green beans and add them to the tomato and tuna sauce and toss everything together so it’s well coated with the delicious sauce.
I like to serve this topped with pangrattato for an added kick of chilli. Pangrattato is simple to make it’s just breadcrumbs fried in olive oil until crisp, with a pinch of chilli flakes and sea salt added.
Make it your way…
- want to up your Omega 3 then use tinned salmon or sardines instead of tuna fish.
- no green beans – skip them or add peas.
- and if olives are a deal breaker, miss them out. It still tastes yummy without them.
- the tuna ‘bolognese’ is good the next day cold as a pasta salad, so if you take lunch to work it’s always worth making a little extra.
