spicy lamb flatbread with feta and lentils, served with green leafy salad, cucumber slices and red onions on a blue and white floral plate

Our lamb flatbread is a super quick and easy weeknight dinner – spicy lamb mince and lentils served on warmed fluffy flatbreads with salad. This will fast become one of your favourite quick weekday recipes.

This is one of my favourite quick and easy dinner recipes to make. It’s super easy to prepare and takes less than 20 minutes to cook.

Flavouring the spicy lamb mince with Harissa paste is a quick and easy way to add a whole lot of flavour with very little effort.

Our warmed lamb flabtread recipe is perfect for cooking when you’re really short on time and want food to be fast and tasty (but don’t want to order take-out)

Lamb Flatbread Ingredients

lamb flatbread ingredients on a wooden board ready to cook - lamb mince, green lentils, crumbled feta cheese, harissa paste, garlic, candied jalapeños, red onions slices, cucumber slices and spinach leaves

This is one of our simple meat dishes you really only need a handful of everyday ingredients to make it.

  • 500g lamb mince
  • 2 cloves garlic – finely chopped or grated for speed
  • 200g canned lentils – I usually use green lentils for this recipe
  • 3 tsp Harissa paste – Harissa paste can be quite spicy so you can use more or less depending on your personal taste.
  • 4 small flatbreads
  • 150g salad leaves
  • 1/2 red onion – sliced into thin half moons
  • 1 red chilli finely sliced – I often use candied jalapeño instead as they add a spicy sweet flavour that tastes so good!
  • 50g feta cheese – crumbled

How to make lamb flatbreads

This is one of my favourite quick and easy midweek meals to make – it’s so simple!

  • Heat a large frying pan over a medium heat – don’t add any oil.
  • Tip in the lamb mince, finely chopped garlic and harissa paste and stir fry for around 10 minutes. If you want to you can drain away some of the fat – I tend to drain off at least half but just do whichever you prefer.

  • Whilst the lamb cooks toast the flatbreads and place on plates, scatter over a handful of salad leaves.
  • Create the lamb flatbreads by topping with the cooked spicy lamb mince and scatter over the feta, red onions and chillies.

Make spicy lamb mince flatbreads your way

You can make our delicious Mediterranean lamb recipe your way – switch up the ingredients and really create your own quick dinner recipes.

  • Make the meal lower fat and switch to turkey mince instead of lamb – now turkey mince is not a flavourful so you’ll need to add a few extra herbs for flavour – try coriander, chopped flat leaf parsley and chives.
  • Make the flatbreads vegetarian and use Quorn mince mixed in with the canned lentils.
  • Add in lots more vegetables try chopped tomato, a simple cucumber raita (cucumber slices mixed with yogurt and mint) and also baby radish work well with this dish.
  • Use toasted pitta breads instead of flatbreads they’re just as tasty.
