Spicy Prawns and Rice

Our spicy prawns and rice is made with succulent spicy king prawns in a lime and chilli marinade served with rice and crackers for an easy weeknight meal you can have on the table in less than 10 minutes.

This is one of my favourite prawn recipes, it’s super quick to make, it uses cheats and it’s perfect for weeknight dinner when you’re busy and short of time but still want to eat great food and not reach for the takeaway menu.

Easy Fried Prawns Recipe

Our spicy prawns and rice recipe is a really quick dinner recipe it only uses a handful of ingredients and really packs in the flavour – fast.

It’s super easy to make and hardly any effort will still result in a delicious, easy dinner for two.

Make it Gluten Free

You can easily make our spicy prawns and rice recipe gluten free – just choose gluten free microwave rice and double check the spices you use contain no gluten.

Don’t feel guilty about using cheat ingredients!

I never feel guilty about using cheat ingredients or cutting corners for speed. Just do what suits you and if you want to cook your rice from scratch and flavour it yourself then do so – if not, grab a bag of rice and ping it in the microwave – job done!

I use garlic infused oil – this just adds lots of flavour, without peeling or chopping garlic.

Use substitutions – that’s okay!

Okay, this is your dinner so if you don’t like something – then leave it out or swap it for something you do like. Make your dinner exactly the way you like to eat it.

Spicy prawns and rice ingredients

Our quick prawn recipe just needs a few ingredients…

  • 2 tomatoes – deseeded and diced
  • 4 spring onions – trimmed and finely sliced
  • 1 lime – half juiced, other half sliced into two wedges
  • 1/2 tbs garlic infused olive oil
  • pinch chilli flakes
  • 1/2 tsp smoked paprika
  • 200g raw king prawns
  • 1 sachet lime and coriander flavoured microwave rice – I use the Tilda sachets
  • small bunch coriander – roughly chopped

How to make spicy prawns and rice

  • Heat the garlic infused olive oil in a small frying pan – tip in the prawns, add the pinch of chilli flakes, and smoked paprika and lime juice. Then fry over a medium heat until the prawns are pink and cooked through properly. It usually takes around 5 minutes.

  • When the prawns are almost cooked – microwave the flavoured rice as per the packet instructions – this usually takes around 2 minutes.
  • Serve up – divide the rice between two bowls, top with the prawns and any juices from the pan. Scatter over the tomatoes, spring onions and coriander. Add a wedge of lime on the side. We like this with sweet chilli prawn crackers for scooping up – but it’s great with tortilla chips too.

Make spicy prawns and rice your way

Wondering what to make with prawns for dinner? Well – mix things up a little!

  • Go Indian with your spices – skip the paprika and use a couple of tsp of curry paste instead – serve with a sachet of pilau rice.
  • Go Italian with your spices – use lemon juice in place of lime and a big sprinkling of dried oregano, fresh basil, flat leaf parsley – serve with a sun dried tomato rice sachet.

Ingredients
