Spicy Stir Fry Potatoes With Spinach (Quick And Easy)

This has to be one of our favourite quick and easy weeknight dinner recipes. And it's vegetarian so perfect for Meat Free Monday!

I tend to serve this topped with fried eggs and a sprinkling of black sesame seeds for an easy meal idea. It's completely delicious and packed with flavour!

Super Easy - really you're just frying up some boiled potatoes with spices and fresh spinach, then adding an egg. It's super easy to make, no special skills or equipment needed.

Leftover Potatoes - you can boil the potatoes ahead of time and keep them in an airtight container the fridge for 2 days ready to use on a busy weeknight. Or you can use leftover boiled or roast potatoes.

Ingredients For Stir Fry Potatoes With Spinach 

You'll only need a handful of ingredients to make our tasty Indian style potatoes with spinach

  • Potatoes - peeled and diced into bitesized cubes (or use leftover boiled or roast potatoes)
  • Olive oil - you can swap this for rapeseed oil, sunflower oil or just a knob of butter
  • Garlic - peeled and grated
  • Ginger - peeled and grated
  • Red Chilli - finely chopped (seeds can be left in if you like your food extra spicy)
  • Onion - peeled and finely diced
  • Indian spices - we use a combination of cumin seeds, turmeric and nigella seeds (but feel free to vary this to suit your own tastes or just use a good pinch of curry powder)
  • Fresh spinach - we roughly chop this before adding. You can swap this for frozen chopped spinach if you prefer (just be sure to cook it a little longer to warm it though properly)
  • Eggs - if you're topping with fried eggs

How To Make Spicy Stir Fry Potatoes - Step-By-Step Instructions

You'll love how easy this spicy potato recipe is to make!

Step One - cook the potatoes

  • Peel and slice the potatoes into small bitesized cubes (so they cook quickly). Then place in a saucepan of cold water add a pinch of salt if you like. Bring the pan to the boil, then reduce the heat and simmer over a medium heat for around 5-6 minutes or until the potatoes are just tender when you insert a knife into them.

Cooks Note - whilst the potatoes are cooking, get on with step two

  • Once the potatoes are cooked, drain them and set them aside until you're ready to fry them

Step Two - fry up the onions and spices

  • Add a splash of oil to the frying pan over a medium heat. Then tip in the chopped onions, add pinch of salt (this just helps them to release the water and soften more quickly) fry them for around 5 minutes.
  • Then add the grated garlic cloves, ginger, chili, teaspoon of cumin seeds, turmeric and nigella seeds and continue to fry for a couple of minute so it starts to smell aromatic.

Step Three - stir fry the cooked potatoes

  • Add the cooked potatoes to the frying pan with the seasoned fried onions. (you may need to add a little more oil)
  • Fry the potatoes for around 5-6 minutes over a medium-high heat, so they start to pick up colour and crisp up a little at the edges. Season with salt and black pepper if you like here.

Step Four - add the spinach to the stir-fried potatoes

  • Tip in the chopped fresh spinach and stir it into the potatoes and onions. Let it wilt into the pan for a couple of minutes.

Step Five - serve your stir fry potatoes

  • Serve the potatoes, either serve onto plates or tip into a serving bowl for people to help themselves.
  • If you're serving with fried eggs, fry them in the pan you cooked the spicy potatoes to give them extra flavour!

What To Serve With Spicy Potatoes And Spinach 

This is a really versatile dish and goes great with any of the tasty ideas below!

  • Chilli fried eggs - eggs fried up in chilli oil are so good on top of stir fry potatoes.
  • Curry - these are delicious alongside your favourite curry either in place of rice or just as an extra side dish.

Recipe Variations And Cooking Tips 

Add some protein - if you'd like to make this a complete meal, add in some extra protein. You could add in some chicken or turkey, minced beef or lamb or keep the dish vegetarian and add in some tofu or chickpeas.

Make it saucy - turn it into more of a curry and add in a carton of passata and a pinch of curry powder to make a potato spinach curry. Serve with naan breads.

Love Your Leftovers

Storage Instructions 

Any leftover stir fry potatoes can be cooled and stored in an airtight container in the fridge and used up within 2 days.

You can eat this cold (and it's delicious for picking at as you wander past the fridge)

I wouldn't recommend freezing this recipe, the texture tends to be a little mushy when defrosted.

Reheating Instructions 

To reheat either pan fry over a low to medium heat or microwave on high until piping hot throughout.
