Spring Chicken Dinner Bowl
A super easy spring dinner idea – our spring chicken dinner bowl has juicy air fryer chicken thighs, buttery new potatoes, and fresh spring veg all piled into a big bowl. It’s quick to make, full of flavour, and perfect for busy weeknights when you want something fresh and hearty.

⭐️ EQUIPMENT NEEDED
- Air Fryer
- 2 Saucepans
- Chopping board
- Vegetable knife
- Tablespoon
- Teaspoon
⭐️ INGREDIENTS
- Chicken thighs
- Seasoning
- New potatoes - scrubbed clean
- Butter
- Dried and fresh parsley
- Spring vegetables (just choose your favourites - we used asparagus, sprouting broccoli and green beans)
- Honey mustard dressing (or any other you like)
⭐️ HOW TO MAKE SPRING CHICKEN DINNER BOWLS
- Sprinkle the chicken thighs with your the seasoning, salt and pepper. Lay them in a single layer in the air fryer basket. Air fry them skin side down on 180C for 20 minutes. Then flip them over and air fry for a further 20 minutes (or until cooked through to an internal temperature of 75C).
- Boil the new potatoes in salted water until cooked through (Pro-Tip - cut them into smaller chunks so they cook in just 5-7 minutes) Once cooked, drain them and then toss in butter, dried and fresh chopped parsley.
- Whilst the potatoes cook - steam the veggies above the potato pan (or boil in a separate saucepan if you prefer - they'll take around 5 minutes to cook through)
- Assemble your spring chicken dinner bowl. Add the crispy air fryer chicken thighs, spoon in the buttery new potatoes, add your spring veggies and drizzle over your honey and mustard dressing.

Ingredients
- 4 large chicken thighs (skin on)
- 2 teaspoon za'atar (or Italian seasoning)
- 800g new potatoes - scrubbed clean
- 50g butter
- bunch fresh parsley - chopped
- 2 teaspoon dried parsley
- 500g spring vegetables - we used sprouting broccoli, asparagus and green beans
- 2 tablespoon honey mustard dressing
