Spring Salad - A Delicious Boiled Egg Salad
This super tasty spring salad is a vegetarian twist on a classic Niçoise, we skip the tuna and pile on the delicious spring vegetables, in this simple egg salad.
This is one of the most beautiful spring salad recipes we make. It's delicious, pretty and almost too good to eat.
Laden with tasty spring vegetables and baby new potatoes, this is one vegetarian salad that won't leave you feeling hungry.

- Leftovers can be popped back in the fridge and are good the next day, either for an easy fridge-raid lunch or taken in lunchboxes to work/school.

Equipment Needed For Making Spring Salad
You'll only need a handful of equipment to make this simple potato and egg salad
- Chopping board
- Vegetable knife
- Saucepan - for boiling the eggs and beans
- Air fryer - for air frying the new potatoes and air fryer asparagus - we use the Tefal air fryer
- Serving platter
Ingredients For Spring Salad
You'll just need a handful of delicious fresh, vegetarian ingredients to throw together this delicious egg salad recipe

- 400g new potatoes
- 125g fine asparagus
- 2 eggs
- 125g green beans
- 8 radish - trimmed and thinly sliced
- 50g green olives - sliced
- 1 tablespoon capers
- Couple of sprigs of fresh dill - chopped
- Handful of fresh flat leaf parsley - finely chopped
- 2 tablespoon olive oil
- Sea salt - pinch
- Black pepper - pinch
- 1 lemon - sliced into wedges, to serve

How To Make Spring Salad
Our boiled egg salad is really simple to make and you'll love how tasty it is!
Step One - air fry the new potatoes and asparagus
- Air fry the new potatoes as per the instructions here for cooking new potatoes in air fryer - you can if you prefer just boil them BUT the air fryer ones are so delicious, they really will notch your salad up a level!

- Air fry your asparagus - get our air fryer asparagus instructions here. Again, you can if you prefer boil or fry the asparagus, but air fried asparagus is so tasty, you'd be missing out to cook it any other way!

Step Two - whilst the potatoes and asparagus are cooking, cook the eggs and beans
- Add the eggs and green beans to a saucepan, cover with cold water (add a pinch of salt if using) then bring the pan to the boil, reduce the heat and simmer for around 7-8 minutes until the eggs are hard boiled and the green beans just tender.
Cooks Note! When I boil eggs in with the vegetables, I give them a wash first, just to be extra safe.
- Rinse the eggs under cold water until they're cool enough to peel, then remove the shells and slice in half.
Step Three - assemble your spring salad
- Take your serving platter and start to build the salad. Add the air fryer new potatoes, lay on the asparagus and green beans, scatter over the sliced radishes and olives. Lay on the halved hard boiled eggs.

- Then scatter over the capers, chopped herbs, drizzle with 1 tablespoon of olive oil and season to taste with sea salt and cracked black pepper, add the lemon wedges and then serve.
