Nothing says summer quite like British strawberries. They're a real treat to eat - fat, plump and always so sweet and juicy - by far the best strawberries!

Our delicious and easy fresh strawberry individual cheesecakes are quick and simple and taste heavenly.

This isn't a traditional oven baked cheesecake recipe it's our no-bake classic cheesecake. Super easy and no faff!

No Bake Strawberry Cheesecake Ingredients

You'll just need a handful of tasty ingredients to make our super easy no-bake individual strawberry cheesecake recipe.

  • 150g digestive biscuits - you can use Graham crackers if you prefer.
  • 100g unsalted butter
  • 150g Philadelphia full fat cream cheese 
  • 80ml double cream (heavy whipping cream)
  • 1 teaspoon vanilla extract
  • 2 tbs icing sugar

Equipment Needed To Make Our Cheesecake Recipe

  • Weighing scales
  • Saucepan
  • Rolling pin
  • Bowl
  • Tablespoon
  • Teaspoon
  • Blender with paddle attachment, mixer or electric whisk
  • Chopping board
  • Vegetable knife
  • 4 small serving dishes

How To Make No Bake Strawberry Cheesecake

You're really going to LOVE how simple, this quick and easy summery dessert is to make.

Step One - make the cheesecake base

  • Melt the butter in a saucepan over a low heat. 
  • Whilst the butter is melting - bash the biscuits into crumbs, just tip the biscuits into a bowl and crush with the end of a rolling pin - this is a job kids particularly like helping with!
  • Tip the biscuit crumbs into the butter and stir well to coat them all. 
  • Divide the buttery crumbs between all the dishes and press down firmly - leaving a flat surface. 
  • Pop the mini cheesecakes into the fridge for an hour to cool down properly before adding the topping. 

Step Two - make the cheesecake filling

  • Make the creamy cheesecake topping - to mix the topping tip the Philadelphia, teaspoon vanilla extract and double cream into a blender with the icing sugar and mix until stiff. Scrape the lovely vanilla cream out of the mixer using a spoon or spatula.
  • Divide the mixture between the dishes and flatten.

Step Three - decorate the mini strawberry cheesecakes

  • Decorate with fresh strawberries - sprinkle a handful of sliced strawberries on top of each mini cheesecake. You can also add a drizzle of strawberry sauce if you like, just warm some strawberry jam in a small saucepan over a low heat on the hob for a couple of mins and then drizzle over the strawberries.

Step Four - chill the cheesecakes in the fridge

  • Pop the cheesecakes into the fridge for 1-2 hrs to chill before serving. I usually cover the tops with a small piece of plastic wrap  whilst they're in the fridge.

This is such a simple cheesecake recipe, and you can mix and match your ingredients to create your won cheesecake creations! 

  • Use raspberries, juicy peaches or autumnal blackberries instead of strawberries.
  • Try vanilla cookies for the base instead of digestive biscuit crumbs.
  • You can add a layer of strawberry puree between the biscuit cheesecake base and the creamy cheesecake filling.

  • Perfect as a summery dessert following any meal or serve at summer parties.
