Super quick pesto is barely a recipe at all. And I suppose it’s not really pesto… there are no nuts. But I definitely think there’s a place for this creamy but piquant bowl of green basil scented dressing. Not least it’s ready really quickly and it tastes just delicious stirred into a pot of hot pasta or drizzled onto toasted sandwiches.
Quick pesto is really easy to make – I use the food processor (as it’s a cheat version of pesto anyway) simply throw in 3-4 large handfuls of basil, I use the stalks too. Add 2 handfuls of finely grated parmesan or pecorino cheese a clove of garlic, pinch of salt and hit blend. Whilst it’s blending into a smooth puree drizzle the olive oil into the food processor to loosen into a nice silky dressing.
A quick nut free pesto ideal for pasta or adding a zing to toasted sandwiches.
- small clove of garlic
- 3-4 large handfuls of basil (use the stalks too)
- 2 handfuls of finely grated parmesan or pecorino cheese
- pinch of sea salt
- olive oil
- Put the garlic, basil, parmesan cheese and pinch of sea salt into a food processor and blitz.
- Drizzle in olive oil as the processor is blitzing to loosen the pesto dressing.
To serve just stir through hot pasta or drizzle into sandwiches.
