We’ve combined the earthy sweet flavours of beetroot with a traditional hummus to create this delicious and perfectly pink beetroot hummus.
I just can’t resist this fabulous dip with it’s lovely nutty taste. I love it spread onto garlic rubbed bruschetta and topped with a scattering of pea shoots. It also makes a great dip for breadsticks, vegetable batons and nachos. It’s vivid pink colour seems to appeal to kids and that makes it an excellent way of getting more veggies into their diet.
Perfectly pink hummus dip with a sweet nutty earthy flavour.
- 1 tin of chickpeas
- 1 large cooked beetroot
- 1 clove of garlic
- 1 tbs sesame oil
- 1 heaped tbs tahini
- pinch of salt
- Put all the ingredients into a blender and blitz until smooth. Add a splash of water to loosen if necessary.
Delicious spread onto bruschetta, or served as a dip with breadsticks, vegetable batons or nachos.
