Sweet Potato Chilli – Advertisement Feature Recipe for American Sweet Potato

Our healthy sweet potato chilli recipe makes a delicious easy vegan meal idea – it’s bursting with flavour and super simple to make.

This week we’ve teamed up with American Sweet Potato to celebrate International Sweet Potato Week and bring you a selection of utterly delicious sweet potato recipes.

As you know sweet potatoes are a big favourite for me when cooking for the family because not only do they taste delicious but they have great nutritional benefits too.

Rich in vitamin A and C, most of the B vitamins, they also contain iron, calcium, selenium and are high in the antioxidant beta-carotene, as well as being a great source of fibre. 

Our delicious vegan sweet potato chilli or ‘chilli non carne’ is super easy to make and tastes so good!

I use the Gran Luchito chipotle paste in my vegan chilli as it gives an amazing flavour to the dish with zero effort needed.

Although – it is quite spicy, so you might want to try out the taste and adjust the quantity of chipotle paste to suit you.

Sweet potato chilli ingredients

  • 1 tbs olive oil – feel free to switch this to rapeseed or sunflower oil if you prefer.
  • 1 red onion – diced
  • 2 red peppers – diced – you can use yellow or orange peppers if you prefer.
  • 2 sweet potatoes – peeled and cut into small cubes
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 400g tin of chopped tomatoes
  • 400g tin kidney beans
  • salt and black pepper to season

How to make sweet potato chilli

This veg chilli is one of our BEST easy vegetarian recipes and it’s super simple to make!

  • Preheat the oven to 180C
  • Add the peppers and chipotle chilli paste and fry for a further 5 minutes.
  • Add the sweet potatoes, tinned tomatoes, kidney beans, cumin and cinnamon. Fill the tinned tomato can half full with water and add that too.
  • Cook in the oven with a lid on for an hour.
  • Serve with tortillas and a freshly made guacamole.

How to serve sweet potato chilli 

  • Serve alongside tortilla chips for dipping and scooping up the chilli. 
  • Add a side of freshly made guacamole
  • Serve with a side of rice or spooned into baked potatoes.

Can I make sweet potato chilli in the slow cooker?

Yes, you absolutely can make our sweet potato chilli in the slow cooker. Just don’t add the extra 1/2 can of water. Cooking the slow cooker veg chilli you won’t need any extra water.

Can I freeze sweet potato chilli?

Yes, you can freeze our sweet potato chilli. Just make sure it’s completely cool before storing in either freezer bags or airtight containers and popping in the freezer.

It will keep okay in the freezer for around 3-4 months.

When using from the freezer – defrost it properly and reheat it thoroughly to a minimum of 75C for at least 5 minutes. I check the temperature with a food thermometer to be safer.

And don’t re-freeze after defrosting/reheating.

A delicious easy vegan chilli recipe with sweet potatoes and kidney beans

Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 1 tbs olive oil 
  • 1 red onion - diced 
  • 2 red peppers - diced 
  • 2 sweet potatoes - peeled and diced into small cubes
  • 2 tsp Gran Luchito Chipotle Chilli Paste 
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon 
  • 400g can chopped tomatoes
  • 400g can kidney beans
  • salt and pepper to season 

Instructions

  1. Preheat the oven to 180C
  2. Add a a splash of olive oil to an oven proof pan and gently fry the onions for 5 minutes.
  3. Add the peppers and chipotle chilli paste and fry for a further 5 minutes.
  4. Add the sweet potatoes, tinned tomatoes, kidney beans, cumin and cinnamon. Fill the tinned tomato can half full with water and add that too.
  5. Cook in the oven with a lid on for an hour.
  6. Serve with tortillas and a freshly made guacamole.
