Teriyaki Chicken Fried Rice Recipe

Looking for a quick and delicious dinner option? Try this easy Teriyaki Chicken Fried Rice recipe! Packed with flavor and ready in minutes.

I just LOVE making chicken fried rice this way, the teriyaki sauce adds a really great flavour and the whole meal comes together in around 20 minutes, so it's definitely a do-able weeknight dinner.

I usually serve alongside some prawn crackers and sweet chilli dip, and of course the kids always ask for a side of homemade salt n pepper chips!

INGREDIENTS

Everything you need to make our delicious teriyaki chicken fried rice

Ingredients needed to make teriyaki chicken fried rice including; Sesame Oil, Chicken, Onions, Peas, Spring onions, Teriyaki Sauce, Mini sweetcorn, Peppers, Basmati Rice
  • Sesame Oil - this adds a really authentic flavour to your fried rice
  • Boneless Skinless Chicken Breasts - you can dice these yourself or buy them ready diced
  • Brown Onion - peeled and chunkily chopped
  • Baby Corn - slice this into thick rings so it cooks more quickly
  • Green Bell Pepper - diced chunkily
  • Frozen Peas - a great way to add extra veggies with zero effort
  • Teriyaki Stir Fry Sauce or Marinade - this gives the chicken fried rice it's tasty twist
  • Microwave Rice - we use this so it's fast and faff free, but you can cook your own if you prefer.
  • Eggs - I always put eggs in my fried rice dishes to up the protein.
  • Bunch of Scallions (Spring Onions) - these are optional, but we love them scattered over the finished teriyaki chicken fried rice.

HOW TO MAKE TERIYAKI CHICKEN FRIED RICE

Prep Time – 5 minutes / Cook Time 20 minutes (approx)

Step by step instructions for making delicious teriyaki chicken fried rice

  1. Fry the chicken - Add 1 tablespoon sesame oil to a wok or large skillet pan and fry the chicken for 5 minutes to seal. Then add the teriyaki sauce and continue cooking until cooked through (smaller pieces of chicken take less time to cook than larger). Once cooked remove the chicken to a side plate
  2. Stir fry the veggies - Then stir fry the brown onion, pepper, baby corn and frozen peas until cooked through.
  3. Add the chicken back and microwave cook the rice - Then tip the chicken back into the pan to heat through. Whilst the chicken and veg are cooking. Microwave the rice as per packet instructions)
  4. Fry the rice - Remove the chicken and veg to a side plate. Add a tablespoon of sesame oil to the wok, and tip in the beaten eggs, stir fry until they start to scramble, then tip in the hot, freshly microwaved rice, and stir fry until the egg is cooked. You can add extra soy sauce here if you like.
  5. Mix everything together and serve - Tip the teriyaki chicken and veg back into the wok and mix everything together. Scatter with chopped scallions and serve straight away.

INGREDIENT SWAPS AND ADD INS

Swap The Chicken - you can swap the chicken for shrimp or tofu and the meal will still be really quick to cook.

Swap The Sauce - swap out the teriyaki sauce for hoisin or sweet chilli for a different flavour twist to the chicken fried rice.

Add Different Vegetables - try adding in mushrooms, cooked edamame beans or thinly sliced carrots.

TOP TIPS FOR MAKING TERIYAKI CHICKEN FRIED RICE

⭐ Using microwave rice, keeps the prep to a minimum and the cleaning up will be quicker.

⭐ This teriyaki chicken fried rice needs eating as soon as it's cooked, it's not one for saving leftovers.

⭐ Make it gluten free by choosing certified gluten free ingredients.

Ingredients

  • 2 tablespoon sesame oil
  • 4 skinless boneless chicken breasts - diced
  • 1 brown onion - chopped
  • 6oz baby corn (180g) - sliced
  • 1 green bell pepper - diced
  • 1 cup frozen peas
  • 1 cup teriyaki stir fry sauce or marinade
  • 2 sachets microwave rice ( enough to serve 4 people)
  • 2 eggs - beaten
  • 1 bunch scallions (spring onions) - sliced
