It tastes just so good! Honestly, if you're searching for comfort food, nothing hits the spot quite like freshly cooked waffles topped with fried chicken and maple syrup. It's just too good! These are good for dinner or as a delicious brunch!

Simple to make - it's not actually difficult to throw this meal together, just do your prep first, then you're literally just left with cooking the waffles and chicken and the cooking bit is easy. Plus I'll pop some cheats below if you want food a little faster.

What You'll Need 

For the fried chicken

  • Large plastic bag 
  • Bowl 
  • Teaspoon 
  • Shallow bowl
  • Tray 
  • Deep Fryer – we use a Tefal Oleoclean fryer – these are great, they filter the oil to clean it after each use!
  • Food Thermometer 
  • Kitchen paper towel

For the waffles

Ingredients For Homemade Chicken And Waffles 

Everything you'll need to make a delicious, homemade, flavor packed fried chicken feast!

For the fried chicken

  • 4 chicken breast - cut into 2 or 3 smaller pieces - you can use chicken thighs fillets if you prefer
  • 1 cup buttermilk
  • 2 teaspoon Cajun seasoning
  • pinch salt
  • pinch black pepper
  • 3 cups fine white breadcrumbs
  • 3 teaspoon paprika
  • 3 teaspoon Cajun seasoning
  • pinch salt
  • pinch black pepper

(you also need the deep fat fryer and vegetable oil for frying)

For the waffles 

  • 1 ¼ cup self rising flour
  • 1 teaspoon baking powder
  • 1 teaspoon superfine sugar
  • 8oz (250ml) whole milk
  • 1 large egg

How To Make Chicken And Waffles 

Once your prep is sorted, the cooking is easy!

How to make fried chicken

  1. Marinate the chicken - add the chicken pieces to a plastic bag, pour in the buttermilk, Cajun seasoning and a good pinch of salt and black pepper. Seal the bag and leave in the fridge to marinate for at least 2-3 hours.
  2. Mix up the coating - for the breaded coating – add the fine breadcrumbs, paprika, Cajun seasoning, a pinch of salt and black pepper to a bowl, mix everything together.
  3. Coat the chicken - take each piece of chicken, toss it in the breadcrumb coating, then lay onto a tray until ready to fry.
  4. Fry the chicken breast pieces - (see note below) we fried our chicken in a deep fat fryer, heated to 400F / 200C – the chicken pieces took around 10 minutes to cook through properly. Please note larger or thicker chicken pieces may take longer. Always check the chicken is cooked through properly (use an instant read food thermometer to do this) and to the correct temperature before serving and eating.
  5. Remove the cooked chicken from the fryer and drain on kitchen paper before serving.

How to make waffles

  1. Mix the dry ingredients – put the flour, baking powder and caster sugar into a mixing bowl and stir gently to combine.
  2. Mix into a waffle batter – make a well in the middle of the dry ingredients and crack in the egg – add a little of the milk and using a wooden spoon – stirring in small circles – gradually mix together the batter – adding more milk whenever it becomes stiff. Eventually you’ll have a smooth rich batter – pour this into a jug it just makes it so much easier for pouring into the waffle maker.
  3. Heat up the waffle maker – I gently brush the waffle plates with a little melted butter and then pour in the batter – I cook these for around 6-7 minutes and don’t even peep at them before 4 minutes is up.
  4. Flip the waffles out – once cooked flip them from the waffle maker using a plastic spatular so you don’t scratch the waffle plates.

How to serve fried chicken and waffles

  1. Slide the waffles onto the plate, load the fried chicken on top, and drizzle over your favorite toppings. I like to serve these with rivers of maple syurp poured over the top.

Ingredients swaps and add ins 

You can swap the seasoning on the chicken breasts for any you like to eat - we love Cajun with maple syrup, but this chicken and waffle feast works great with Italian style chicken, southern fried chicken seasoning, buffalo chicken breasts, or just plain garlic powder with herb. Choose your favourite!
