This easy Tomato And Cucumber Salad is a great option for summer picnics and BBQs. You can make it in minutes and add your favourite salad dressing. 

So if you’re looking for a good recipe for tomato and cucumber salad, you’ve found it! 

This delicious Mediterranean side dish salad has to be one of my most favourite salads to make. I usually dress it with a simple vinaigrette dressing made with lemon juice, olive oil, and lots of fresh parsley.

But it’s also delicious made with a creamy Greek yogurt and fresh dill style dressing too. 

It’s ideal served with grilled chicken, like our yummy air fryer chicken breast recipe here or alongside burgers or as a quick side dish for naan bread pizza.

Easily add in extra ingredients  not only is our easy cucumber tomato salad a tasty stand alone side dish, but it’s the perfect base for adding in some extra ingredients. Like delicious feta cheese, avocado, olives, crunchy nuts and seeds or simply some extra fresh herbs like basil, oregano or mint.

  • Chopping board 
  • Vegetable knife 
  • Large bowl 
  • Small bowl
  • Whisk or fork 
  • Lemon juicer

Tomato And Cucumber Salad Ingredients 

You’ll only need a handful of fresh and tasty salad ingredients to make this flavoursome tomato salad recipe.

  • 4 vine tomatoes – chopped into wedges – you can substitute cherry tomatoes in this recipe – you’ll need about 400g 
  • 1 whole English cucumber – sliced into half moons 
  • 1/2 red onion – finely chopped 
  • Bunch flat leaf parsley 
  • Juice of half a lemon – you can substitute a tablespoon of red wine vinegar in place of the lemon juice. 
  • 1 tbsp olive oil (which is low in saturated fat) 
  • Pinch sea salt – just the tip of a teaspoon if you’re on a low sodium diet, just skip the salt. 
  • Pinch black pepper

How To Make Tomato And Cucumber Salad That’s Packed With Taste And Flavor

Step One – prepare the salad vegetables 

  • Slice the vine tomatoes into wedges. If you’re using cherry tomatoes or grape tomatoes, just slice them into halves instead. 
  • Slice the English cucumber into half moons. You can remove the peel if you prefer, but I like to keep it in the salad so it adds a lovely vibrant green colour. 
  • Finely chop the red onion.
  • Finely chop the flat leaf parsley.

Step Two – whisk up the salad dressing 

  • Add the olive oil and lemon juice to a small bowl.
  • Add in a pinch of salt and pinch of black pepper.
  • Whisk the dressing together using a fork, so that it’s well mixed.

Cooks Note – if you prefer you can add the salad dressing ingredients to a bottle and shake – this is extra handy if you’re mixing up larger batches as you can store it in the fridge for your next salad. 

Step Three – assemble the Tomato Cucumber Salad Recipe  

  • Take a large bowl and toss in the tomatoes, the sliced English cucumbers and the chopped red onion.
  • Give everything a toss together.
  • The pour over the homemade salad dressing and toss again. 
  • Next scatter in the chopped fresh parsley and gently stir it through the salad.

Step Four – serve the Cucumber Tomato Salad Recipe 

  • Tip the side dish salad into a large bowl and serve alongside your favourite summery meal.

Tasty Tips From Our Kitchen To Make Your Tomato And Cucumber Salad Even Better!

Add some protein this salad is great with added grilled chicken, grilled pork or feta cheese and fried halloumi for a calcium boost. To keep it plant based, add in some nuts and seeds or chickpeas just from a ready-to-eat can.

Make creamy cucumber salad – I get it, some days you want a creamy, luscious, rich kind of a salad, and so you can whip up a quick creamy Greek yogurt dressing instead – just whip yogurt, a little splash or lemon juice or white wine vinegar and add in your favourite fresh herbs (tip… it works great with fresh dill) 

The creamy version of this salad is amazing with pork meatballs and herby rice. 

Mason jar salad – I know, I know… a mason jar doesn’t affect the taste BUT, I just love salad in a jar, it makes me happy (maybe I spend too much time on Pinterest…)
