When it comes to feeding children sometimes getting them to eat is just a matter of arranging things differently and giving it a special name. Traffic light salad is just that.
Our traffic light salad for kids is simply a dish of baby plum tomatoes quartered for the red light, a dish of sweetcorn for the amber light and a dish of sliced cucumber for the green light.
I arrange this in the centre of the table like a traffic light and the kids eat the salad with no fuss. Traffic light salad is great served with pizza, chicken or fish and chips. Great thing with this salad is it’s so quick to make and you can make it up in advance and keep it in the fridge until needed. Any leftovers can be popped on sandwiches or stirred into pasta salad for lunch the next day.

Ingredients
- Punnet of baby plum tomatoes - quartered
- Can of sweetcorn
- Half a cucumber - sliced
Instructions
- Simply arrange the salad items into three bowls and place on the table red, amber, green.
