Step One - cook the jacket potatoes

  • Cook the jacket potatoes in either the microwave, oven or air fryer until done to your liking - see our cooking instructions below.

How To Bake Potatoes Ready For Your Tuna Jacket Potato Feast!

Oven Baked Potatoes - cook in around 90 minutes

  • Scrub the skin and dry thoroughly.
  • Prick the skin all over with a fork
  • Rub the skin with olive oil and sprinkle with salt
  • Bake in a preheated oven at 160C for around 90 minutes - jacket potatoes are cooked when they are squidgy and soft when you squeeze them. Just wear an oven glove to avoid getting burnt hands.
  • If it's not quite cooked, return to the oven and continue cooking - check every 10 minutes until done.

Air Fryer Baked Potatoes - cook in around 60 minutes

This is our favourite way to make tuna jacket potato!

  • Scrub the skin and dry thoroughly.
  • Prick the skin all over with a fork
  • Rub the skin with olive oil and sprinkle with salt
  • Air fry at 170C for 30 minutes, then turn them over and continue to cook at 190C until done to your liking.

Microwave Jacket Potatoes - cook in around 10 minutes

  • Scrub the skin and dry properly.
  • Prick the skin all over with a fork, this will stop it bursting as it cooks - don't rub the skins with oil. Microwave baked potatoes don't crisp up so don't need oiling.
  • Microwave on high for around 5 minutes, then turn the potato over and continue to cook for a further 4-5 minutes (depending on the size of the potato). Just keep giving it a squeeze wearing an oven glove or using a dry towel, every few minutes to see if it's cooked.
  • If you're cooking more than one potato at a time, you may need to microwave for a little longer.

Jacket Potato In Microwave Then Oven or Air Fryer

Doing it this way cuts a little time off the oven or air fryer cooking time and you'll still end up with crispy skins and be eating your tuna jacket potato quicker!

  • Scrub the skin and pat dry properly.
  • Prick the skin all over with a fork - don't oil yet.
  • Cook the potatoes on high for around 6 minutes (longer if cooking more than one potato), turning half way through cooking.
  • Remove from the microwave and place on a plate - brush them with oil using a pastry brush so you don't burn hands, and sprinkle with salt.
  • Then cook in the air fryer or oven until the skins are crispy and the potatoes squash when you squeeze them.

Step Two - make the tuna and sweetcorn mayo filling

Step Three - serve your tuna jacket potato recipe

  • Put the jacket potatoes onto plates or in serving bowls. Cut them open - you can if you like add a big knob of butter to the middles of the potato and just mash it into the fluffy centre, before adding the tuna and sweetcorn filler.
  • Pile in the tuna and sweetcorn and eat straight away - they're just so delicious!
