This watermelon feta salad is a perfect light dish for any summer occasion.

You’ll only need a handful of delicious, lovely summer ingredients to make our tasty watermelon salad.

  • 1/2 cucumber – sliced into half moons
  • 250g watermelon chunks
  • 200g feta cheese
  • 1/2 small red onion – sliced into half moons
  • 1 tbsp olive oil – opt for a nice fruity olive oil
  • 4 mint leaves – chopped finely

How To Make Watermelon And Feta Salad

You are going to just LOVE how simple this delicious summery salad is to throw together.

Step One – scatter the salad ingredients over the serving platter

  • Start by scattering a layer of cucumber slices onto the platter, then scatter over the watermelon and feta and finally the red onions.

Step Two – season and dress the cubed watermelon feta salad

  • Drizzle over the olive oil and season with a little cracked black pepper. Then scatter over the chopped mint leaves.
