I just find meal planning helps me to be way more organised and it saves me time and money.

Family life is often hectic so meal planning just makes my life so much easier. 

It also means the meals stay fairly healthy and I include way more fruit and vegetables. 

WEEKLY MEAL PLAN – FAMILY DINNER IDEAS 

Weekly Meal Plan

Monday – Roast Tomato Spaghetti

I love this simple pasta recipe – roasting the tomatoes makes them so sweet and delicious.

Just toss through freshly cooked spaghetti and sprinkle with parmesan cheese for an easy meat free dinner.

Tuesday – Thai Chicken Curry

I’ll be cooking up a simple Thai Chicken Curry adding in strips of chicken breast, sliced peppers and onions, served with boiled rice and Thai spiced crackers.

Wednesday – Roast Chicken and Patatas Bravas

I’ll do a lemon and herb roast chicken, then serve with my favourite potato dish Patatas Bravas – I love this spicy little potato side dish, it’s super easy to make and always worth making extra for the next day too.

Thursday – Meatballs and Salad Stuffed Pittas

I’ll be making homemade meatballs spiced with Moroccan spice mix then baking them in the oven just because then I don’t have to stand watching a pan…

I’ll stuff them into toasted pitta breads with homemade hummus and loads of salad. I’ll probably add a side of spicy couscous too.

Friday – Sea Bass Traybake

roasting tin filled with sea bass tray bake freshly cooked - sliced new potatoes, halved baby plum tomatoes, sea bass fillets, black olives and lots of freshly torn basil and chopped flat leaf parsley

Fish traybake is so simple and completely delicious – layers of roast new potatoes and baby tomatoes with herbs topped with lemony sea bass fillets – simple and so good!

You can make this with cod or salmon fillets too or even king prawns – it’s all good!

I’ll serve with green salad or steamed green beans.

Saturday – Quick Chilli Con Carne with Baked Beans

Oh this is just the BEST chilli con carne to cook for kids – they much prefer baked beans to kidney beans.

I’ll serve with rice, cheesy nachos and guacamole.
