A weekly family meal plan filled with easy to make family dinner recipes.
Monday – Gnocchi with Tomato Sauce
Meat free Monday – I’ll be cooking up a rich tomato sauce and serving with gnocchi and melting mozzarella over the top just under the grill – totally delicious! Grab the tomato sauce recipe here.
Tuesday – Roast Chicken
I’ll be making herby roast chicken and serving with baby roast potatoes, asparagus and salad. Leftovers will go into tomorrows packed lunch.
Wednesday – Meatballs and Pasta
I make a quick cheat sauce to go with meatballs – using flavoured passata and just adding finely chopped onion and garlic – just simmer for around 25 minutes whilst the meatballs and pasta cook and then toss everything together.
Thursday – Spanish Chicken Rice
This is one of my favourite quick dinners – so flavourful and just serve alongside a couple of bought salads for a quick dinner. Grab the Spanish rice recipe here.
Friday – Homemade Pizza
I’ll be making homemade pizzas topped with salami, rocket, goats cheese and chilli jam because it just tastes SO good!
Saturday – Chicken & Roast Veggie Wraps
Quick and easy roasted Mediterranean style veggies with chicken breast slices – wrapped up in wholegrain wraps with garlicky lemon mayonnaise dressing or hummus.
Sunday – Italian Chicken Traybake
I love this for an easy Sunday dinner – I usually serve with some herby couscous and salad or veggies on the side. Get the Italian traybake recipe here.
