Monday – Sea Bass Tray Bake
Simple, healthy Italian style fish tray bake – the kids LOVE this recipe and it’s so easy to do, layers of sliced potatoes topped with baby plum tomatoes, lemon, herbs, olives and sea bass fillets – grab the sea bass tray bake recipe here.
Tuesday – Sticky Sausages with Slaw
I’ll be marinating pork sausages with honey and chilli dressing and slowly cooking in the oven. I’ll serve them on toasted rolls with homemade red apple coleslaw. Grab the coleslaw recipe here.
Wednesday – Halloween Pasta Pots
I’ll be cooking up delicious one-pot pasta and topping with mini mozzarella and grated cheddar – perfect for warming up freezing little trick or treaters! Get the Halloween Pasta recipe here.
Thursday – Veggie Ragu
Yes more pasta… the kids love pasta and it’s just so easy. Our vegetable ragu is low cost, big flavour comfort food. Get the veggie ragu recipe here.
Friday – Tandoori Salmon
This is simple and yum! Just marinate the salmon fillets in a mixture of yogurt and tandoori spices – then grill and serve flaked into wraps with crunchy salad and mango slices. Add a side of microwave spicy rice and some popadoms.
Saturday – Fajita Night
Got to love fajita night! I tend to do the chicken and veggies in the oven – it’s just easier when you’re feeding a crowd – I’ll serve the fajitas with homemade guacamole, salsa and loaded cheesy nachos. YUM! Might even sneak in a margarita too!
Sunday – Dirty Cajun Rice
Skipping the Sunday dinner this week and making a big panful of dirty rice instead – spicy and delicious!
