It’s all back to routine this week – back to school, back to work, back to being a little bit more organised. This weeks family meal plan is filled with easy, tasty dinner recipes that won’t take too long to make.
Monday – Mince Beef Pie
Use the slow cooker to make the minced beef pie filling then top with shop-bought pastry and finish in the oven – serve with mashed root vegetables and peas. Grab the minced beef pie recipe here.
Tuesday – Chicken Fajitas
I love fajita night a lot more now I cook them up the lazy way on a baking sheet in the oven – just seems way less effort! I serve with soft flour wraps, shredded lettuce, cheddar, soured cream and re-fried beans.
Wednesday – Tuna Pasta Bake

Thursday – Fish Finger Sandwiches
Soft malted bread – stuffed with crispy fish fingers, baby leaf salad, sliced tomatoes and a smattering of tartar sauce – served with a side of potato wedges with pesto pea dip – get the ultimate fish finger sandwich recipe here.
Friday – Roast Butternut Squash and Feta Couscous

Saturday – Peri Peri Chicken Stew

Sunday – Slow Cooker Brisket
