I just find meal planning helps me to be more organised and it saves me time and money. Family life is often hectic so meal planning just makes my life so much easier.

Weekly Meal Plan
Monday – Roast Squash & Feta Couscous
Roast Squash & Feta Couscous is a super easy meal idea for Meatless Monday – this simple vegetarian dinner is a total hit here and it’s so easy to make!
Delicious roast squash and red onions are tossed with flavoured couscous, feta cheese and fresh herbs, scatter over a handful of pine nuts to finish. You can of course do a vegan version and skip the feta or use a vegan cheese alternative. Get the Roast Squash & Feta Couscous Recipe here.
Tuesday – Slow Cooker Turkey Keema
A healthy slow cooker curry that tastes just so good! Using turkey to make keema instead of lamb mince makes the meal much lower fat but it’s still really flavoursome.
I serve turkey keema with boiled rice, scatter the turkey keema with freshly chopped coriander, red chillies and a wedge of lime on the side. It’s great for dinner on busy days and if you’re really short of time just use microwave rice as that cooks in 2 minutes. Get the Slow Cooker Turkey Keema Recipe here.
Wednesday – Sausage, Mash & Onion Gravy
Sausage and mash is one of the kids favourite dinners – I’ll add cheat’y Aunt Bessies Yorkshire puddings and pour lovely cheat-y onion gravy all over the dinner.
Our cheat’s onion gravy is super easy and made using Bisto but it really adds a nice tasty twist to a plain old bangers and mash. Get the Cheat’s Onion Gravy here.
Thursday – Peri Peri Chicken, Chips & Nando’s Style Peas
I’ll be cooking up a simple roast chicken with Nando’s marinade poured over it and serving with oven chips and a side of homemade Nando’s style peas – this is just my favourite way to eat peas… EVER! Get the Nando’s Style Peas Recipe here.
Friday – Slow Cooker Chicken Curry
The perfect ‘fake’ away for a Friday night – ditch the take away and treat yourself to a homemade curry instead. Our easy chicken curry is packed with flavour and ridiculously simple to make.

Saturday – Lancashire Potato Hash
A budget dinner that’s perfect for serving a crowd this retro recipe with beef mince, sliced potatoes, carrots and onions is easy on your wallet and super filling.
Serve Lancashire potato hash with pickled red cabbage and beetroot. I add a side of buttered crusty bread too for mopping up the gravy. Get the Lancashire Potato Hash recipe here.
Sunday – Chicken Roast Dinner
Some Sunday’s need a cheat of a roast dinner so I’ll be cooking up roast in the bag chicken and delving into the freezer for roast potatoes, carrot and swede mash, peas, broccoli and mini Yorkshire puddings. Roast dinner the easy way!
