Well after a little meal planning break whilst food shopping has been so random lately, now things have settled down a lot I’m back to the meal plans.
I just find meal planning helps me to be way more organised and it saves me time and money. Family life is often hectic so meal planning just makes my life so much easier. It also means the meals stay fairly healthy and I include way more fruit and vegetables.
WEEKLY MEAL PLAN – FAMILY DINNER IDEAS
- Monday – Roast Squash and Feta Couscous
- Tuesday – Sausages in BBQ Sauce with Rice and Vegetables
- Wednesday – Herby Roast Chicken with Greek Pasta Salad
- Thursday – Buttermilk Fried Chicken with Rice and salad
- Friday – Tuna Bolognese
- Saturday – Homemade Pizza
- Sunday – Roast Squash and Feta Pie
WEEKLY MEAL PLAN
MONDAY – ROAST SQUASH AND FETA COUSCOUS
I’ll be making a tray of roast squash and feta couscous it’s a super easy vegetarian dinner recipe that’s ridiculously easy to make. It goes really well with a tomato salad and maybe some homemade slaw and toasted pittas.

TUESDAY – SAUSAGES IN BBQ SAUCE
I’ll turn a pack of sausages into sausage meatballs and simmer them in a homemade BBQ sauce (I’ll put the recipe up for this later in the week it’s DELICIOUS!)
I’ll serve the sausages with plain boiled rice and a pile of vegetables from the veg box so probably garlicky shredded cabbage, broccoli and asparagus.
WEDNESDAY – HERBY ROAST CHICKEN
I’ll roast a chicken with lots of fresh herbs and lemons then serve with a simple Greek orzo pasta salad. Fresh, healthy and delicious and if there’s any leftovers they’ll be good tomorrow lunch.

THURSDAY – BUTTERMILK FRIED CHICKEN
I caved in and bought yet another kitchen gadget! A DEEP FAT FRYER, admittedly not the healthiest of gadgets but…. the thought of homemade buttermilk fried chicken and battered halloumi and HOMEMADE DOUGHNUTS won me over.
So I’ll be trying out some fried chicken and serving with vegetable rice and lots of salad…. for balance.
FRIDAY – TUNA BOLOGNESE
Our tuna bolognese is such an easy recipe, it’s packed with flavour and is super simple to make plus it’s a store cupboard recipe so it’s a great fall back dinner.

SATURDAY – HOMEMADE PIZZA
We’ll be firing up the pizza oven and cooking some homemade pizza… I might even make a few of my new favourite pizza… smoked salmon and cream cheese. They’re AMAZING!
I whisk up a base of Greek yogurt and cream cheese and spread onto freshly rolled pizza dough – then cook in the Ooni pizza oven for around 4-5 minutes.
Then top with smoked salmon, capers and freshly picked chives, add a squirt of lemon juice and it is perfection!
SUNDAY – ROAST SQUASH AND FETA PIE
Our roast squash, red pepper and feta pie looks and tastes amazing but is actually really easy to make to!
It’s a lovely summery recipe and great for laid back Sunday lunch or picnics. Serve hot or cold with some side dishes like potato salad, green salad, tomato salad and a nice homemade coleslaw.
