Weekly Meal Plan
Monday – Minced Beef Pie
Total family favourite at our house – I’ll be cooking up minced beef pie – I make the filling using the slow cooker then just top with ready rolled pastry and bake – I serve with chips and gravy for a proper comfort food dinner.
Tuesday – Steak & Broccoli Stir Fry
A quick and easy midweek dinner recipe – steak and broccoli stir fry – I make this spicy with lots of szechuan pepper, serve with toasted peanuts and extra chilli slices.
Wednesday – Roast Red Pepper Pasta
Homemade roast red pepper pesto pasta is super easy and tastes really good! I’ll serve with some winter salad leaves which we’ve been growing in the garden.
Thursday – Chicken and Chorizo Stew
I’ll be making a slow cooker chicken and chorizo stew – throwing in loads of veggies and tin of chickpeas and plenty of Spanish flavours like smoked paprika. I’ll serve with focaccia and maybe a side of lemony roast potatoes.
Friday – Cheat’s Katsu Curry
Great for Friday night – this quick and easy chicken curry is way better than take-out.
Saturday – Homemade Pizza
We’ll be firing up the pizza oven and making gorgeous homemade pizzas.
Sunday – Lasagne
A little twist from the usual Sunday dinner – I’ll be doing a big homemade lasagne with green veggies, garlic baguettes and probably a chocolate cookie dough pots with ice-cream melting into them.
