Weekly Meal Plan
Monday – Cuban Picadillo
This is a new recipe we’ve been making a lot lately – it’s kind of like a mild chilli, with less tomatoes, no beans and lots of olives, potatoes and a handful of raisins. I serve with plain boiled rice.
Tuesday – Chicken Thai Green Curry
I’ll be making a quick Thai curry – using green Thai curry paste, chicken, broccoli, baby corn and coconut milk. I’ll serve with plain boiled rice and Thai crackers.
Wednesday – Baked Potatoes
Really easy dinner – oven baked potatoes stuffed with tuna and sweetcorn or cheese and beans. I’ll make a few salads to go alongside.
Thursday – Crispy Chicken Curry
This is a total favourite at our house – it’s super easy to make and always guarantees empty plates. Grab the Easy Chicken Curry Recipe here.
Friday – Homemade Pizza
Friday night pizza night is definitely getting to be a habit. This weeks toppings will be pepperoni, spicy cheddar and peppers.
Saturday – Sticky Chinese Chicken
I’ll be cooking up just the BEST sticky Chinese chicken with homemade Chinese style salt and pepper chips. I promise I’ll put the recipe up on the blog for this soon – it’s too good! You can get the homemade Chinese style salt and pepper chips recipe here.
Sunday – Sausage Stew
I’ll be making an easy sausage stew and serving with mashed potatoes, Yorkshire puddings and homegrown kale. Get the Sausage Stew recipe here.
