WEEKLY MEAL PLAN
Monday – Pasta with tomato & basil sauce
Roast Tomato & Basil Pasta is perfect for meat free Monday – it’s super easy to make and a recipe we all love.
Baby tomatoes are roasted in the oven with olive oil, garlic and herbs until squishy, soft and sweet.
I usually serve this with fresh spaghetti and half a ball of mozzarella per person with a drizzle of olive oil.

Tuesday – Roast Vegetables with Halloumi and Flatbreads
Roast Mediterranean vegetables are one of my favourite things – once you’ve roasted a tray of vegetables there loads of ways you can use them.
- in pasta sauce
- to top bruschetta
- to top pizzas
- with spicy sausages and rice/pasta
Or like I’m cooking this week – Roast Mediterranean Vegetables with Harissa marinated halloumi tucked into warmed flatbreads with salad. Delicious!

Wednesday – Pork & Cider Casserole
Pork and Cider Casserole is a great recipe for cooking in the slow cooker and slow cooker recipes always work well.
They’re especially handy on busy days when you really want dinner to just take care of itself.
The Pork & Cider Slow Cooker Casserole is flavoured with thyme and packed with fresh vegetables.
It’s delicious served with creamy mashed potatoes.

Thursday – Slow Cooker Peri Peri Chicken Stew
Slow Cooker Peri Peri Chicken Stew is a total hit here.
A spicy chicken stew that the kids just loved served with wedges, mash or rice and a side of homemade Nando’s style peas.

Friday – Tapas
Friday is great for tapas – I’ll cook up a selection of little dishes – prawns, chorizo in red wine, aubergine and tomato stew, patatas bravas and grab some great sourdough bread for mopping up the juices.

Saturday – Sea Bass Tray Bake

Fish tray bakes are really easy to make and taste amazing – think of it as a healthy twist on fish & chips.
I thinly slice potatoes and layer them into a roasting tin, scatter over lots of halved baby plum tomatoes and black olives.
I add in garlic and lemon zest and juice and season well with salt and ground black pepper.
Once the potatoes have cooked through and are tender – add the sea bass fillets on top of the potatoes and cook them through – scatter with chopped flat leaf parsley and serve.

Sunday – Shawarma Chicken
I’ll be using the slow cooker again this week to make this DELICIOUS shawarma chicken.
Marinate the chicken and then cook in the slow cooker – once it’s done just pull the chicken with two forks and load onto flatbreads with salad and sauces.
