Weekly Meal Plan
Monday – Chickpea Curry
This is great for meat free Monday – a healthy vegan chickpea curry you can have ready to eat in under 30 minutes. I serve with boiled rice and naan breads.
Tuesday – Minced Beef Pie
Well… it is the comfort food season so I’ll be making a really easy minced beef pie – this pie served with chunky chips and a side of peas always guarantees empty plates.
Wednesday – Chicken Fajitas
Got to love fajita night – it’s a really quick and easy dinner – packed with fresh veggies. I serve this homemade guacamole, corn cobs and BBQ beans.
Thursday – Cheat Katsu Curry
Cheat Katsu curry is a really quick chicken curry recipe – it’s ready to eat in 30 minutes and because we use breaded chicken strips it’s always a big hit with the kids. I usually make the curry sauce ahead of time and then all I have to do is cook the chicken and rice when I get home.
Friday – Easy Spanish Rice
Another cheat recipe! Our Spanish rice is just so easy, quick and tasty – perfect for relaxing with on a Friday night.
Saturday – Chicken Burgers
I’ll be cheating with these and buying ready made – serving them in folded flatbreads with hummus, halloumi, chilli jam and salad. I’ll add a side of loaded Greek style fries alongside.

Sunday – Lancashire Hotpot
Sometimes Sunday needs a plate filled with Lancashire hotpot with a side of pickled red cabbage. Proper comfort food.
