WEEKLY MEAL PLAN
MONDAY – HOMEMADE GNOCCHI
I’ll be making homemade gnocchi – its actually really easy to do and well worth the time it takes as it just tastes so good! I’ll just serve with a quick tomato and basil sauce – perfect for Meatless Monday.
TUESDAY – CHICKEN FAJITA BOWLS
I’ll be cooking up a tray bake chicken fajita mix and serving with rice, avocado, salad and cheese… maybe a few nachos on the side. Easy and delicious.
WEDNESDAY – SPICY SAUSAGE LINGUINE
Since I bought the pasta maker attachment for the KitchenAid I’ve got a bit of thing for fresh pasta – it’s super easy, I mix the dough in the bread maker and then just roll in through pasta maker. I’ll cook a quick spicy sausage tomato sauce and toss it all together.
THURSDAY – GREEK LAMB FLATBREADS
I’ll be making spicy Greek lamb and lentils and serving with flatbreads, feta cheese, salad leaves and homemade tzatziki.
FRIDAY – FISH TACOS
I’ll be making quick and easy fish tacos – with a quick salsa to top them off. Get the fish taco recipe here.
SATURDAY – STIR FRY BBQ CHICKEN
This recipe is perfect for a Saturday – quickly fry up strips of chicken, peppers and red onions, squeeze over the BBQ sauce and serve with rice and peas – total hit with the kids and all cooked within 20 minutes.
SUNDAY – LANCASHIRE HOTPOT
Lancashire Hotpot is total comfort food – slowly cooked lamb and vegetable stew topped with potatoes – I always add a side of crusty bread and pickled red cabbage. Get the Lancashire hotpot recipe here
