Weekly Meal Plan Recipes
Veggie & Bean Fajitas
I’ll be roasting peppers, onions and butternut squash, seasoned with smoked paprika, oregano and mild chilli powder then serving with re-fried beans and grated cheddar in fajita wraps. I’ll add a side of spicy fries.
Crispy Chicken Curry
We use the cheat Katsu curry sauce recipe from Eat Well for Less and serve with crispy chicken strips, rice and a little mango salsa on the side.
I’ll be making pulled pork in the slow cooker – marinated with cola, brown sugar, herbs and spices and serving in toasted brioche buns with homemade slaw. I’ll add a side of garlicky potato wedges and sour cream dip.
Pork and Peanut Noodles
I’ll be using leftover pulled pork to make pork and peanut noodles – I’ll add in peppers, Chinese hoisin sauce and sprinkle over peanuts and sesame seeds.
Italian Style Chicken Hotpot
I’ll be cooking up an Italian chicken stew with chicken, tomatoes and black olives, seasoned with Italian herbs, then finished in the oven topped with sliced potatoes, dots of butter and lots of Parmesan cheese.
Slow Cooker Peri Peri Chicken Stew
The kids just LOVE this spicy slow cooker chicken stew – it’s super simple to make – just serve with a side of shop bought potato wedges and a side of homemade Nando style peas.
Pendle Witch Stew
Sunday is made for Pendle Witch stew – slowly cooked this rich and warming stew is perfect with oven baked potatoes, roast potatoes or mash. Get the Pendle Witch Stew recipe here.
