Weekly Meal Plan
Monday – Chicken Reuben Sandwiches
I’ll be cooking herby chicken breasts and then thinly slicing and loading up onto rye bread with sauerkraut and Swiss cheese.
I’ll serve with oven roast potato wedges and beetroot salad.

Tuesday – Spaghetti Puttanesca
I’ll be making proper store cupboard puttanesca sauce with tinned tomatoes, tinned anchovies, black olives, capers, loads of garlic and just a little twist of red wine.
I’ll toss through freshly cooked spaghetti.
Wednesday – Garlic Chicken Noodles
I love making noodles – they’re so fast and great for midweek dinner – I’ll be marinating the chicken in lots of garlic, lime, chilli and ginger then quickly stir frying with peppers and spring onions – toss through sesame dressed noodles and serve.
Thursday – Slowly Cooked Beef Ragu
I’ll be making a slowly simmered beef ragu – I’ll use steak, tinned tomatoes, red wine, and veggies – cooked slowly for hours.
I’ll serve with fresh tagliatelle and lots of Parmesan cheese.
Friday – Homemade Fish & Chips
I’ll be cooking salmon or prawns in foil packets with lots of fresh herbs and lemon.
I’ll make oven baked wedges to serve alongside and maybe some winter salad from the garden.

Saturday – Wood-fired Pizza
Homemade pizzas cooked in the wood fired oven – I’ll be topping them with chorizo, mushrooms, goats cheese and rocket.
Sunday – Thanksgiving Dinner
I’m all for a food based celebration so this year we’ll be joining in Thanksgiving…
but just a few days late – I’ll be cooking turkey, roast potatoes, stuffing, cranberry sauce, veggie side dishes and homemade pecan pie.
