WEEKLY MEAL PLAN
MONDAY – PEANUT VEGGIE NOODLES
I’ll be making a really quick stir fry with broccoli, baby corn, peppers, handful of crushed peanuts and a spicy homemade peanut satay stir fry sauce (just peanut butter, sweet chilli sauce and soy sauce mixed together)
TUESDAY – THAI CHICKEN CURRY
A quick curry with chicken breast, broccoli and baby corn simmered in Thai curry paste and coconut milk served with boiled rice.
WEDNESDAY – PERI PERI CHICKEN
Our peri peri roast chicken is a total favourite! Homemade peri peri marinade just whizzed in the blender and rubbed all over the chicken before roasting – It tastes AMAZING! I serve this with baked potatoes and salad. Leftover roast chicken is great in wraps or salad next day for lunch.
THURSDAY – PASTA PUTTANESCA
Our pasta puttanesca sauce is just the BEST! And it’s such a super easy recipe it’s perfect for cooking on a busy weeknight. I serve with spaghetti or linguine and maybe some salad or broccoli.
FRIDAY – SALMON PARCELS
I’ll be making salmon fillets – just wrap the salmon fillets with herbs and a splash of olive oil in tin foil parcels – bake in the oven and serve with potatoes or rice and a side of vegetables.
SATURDAY – SLOW COOKER TURKEY KEEMA
We just love this slow cooker keema recipe – it’s cooked in the slow cooker so it’s low faff and switching the traditional lamb mince for turkey just makes it lighter and healthier. I serve with rice and usually some little thai crackers with chilli dip.
SUNDAY – MINCED BEEF PIE
A super easy minced beef pie – make the filling in the slow cooker then top with pastry to finish in the oven – I serve this with mashed potatoes and peas. It’s a total hit with the kids.
